Cheesy Corn and Zucchini
Serves: 8
 
Ingredients
  • 2 TBSP Caesar Dressing ~ 2-1/2 Cups frozen sweet whole kernel corn ~ 1 cup frozen sliced Zucchini ~ ½ Cup Yellow Onion - diced ~ 1 cup Mexican style Shredded Four cheeses ~ ½ cup 0% Greek Yogurt ~ ½ cup tomato - chopped
  • Optional: Ham or Bacon
Instructions
  1. Heat a skillet on medium-high heat and add in the dressing, onion, corn and zucchini.
  2. Cook until the veggies are fork tender approximately 8-10 minutes.
  3. Turn the heat down to medium and remove pan from heat , stir in the cheese, and Greek yogurt until combined.
  4. Place the pan back on the heat and cook approximately 3-5 minutes or until the cheese is melted. Be sure to stir frequently so as not to scorch the veggies. Sprinkle in the diced tomato and mix to incorporate. Serve.
  5. This is perfect as is for a good Vegetarian dish, but if you aren't a Vegetarian and want to bulk it up you can mix in some Ham chunks or a few strips of cooked bacon crumbles. I ate this as a main dish with a side salad.
