Corn and Asparagus Red Leaf Salad
 
Ingredients
  • 2 cups Red Leaf Mix lettuce ~ ¼ cup grilled corn ~ ¼ Cup grilled asparagus spears ~ 2 hard boiled eggs - sliced ~ ½ Red Vine Tomato ~ Salt and pepper to taste
Instructions
  1. Grill corn and asparagus on the grill or in a small saute pan. Boil the eggs for about 10-12 minutes. Place lettuce on place. Top with the remaining ingredients. Toss in your dressing of choice, I used Fig Infused Vinegar
  2. I had considered adding in pineapple, slivered almonds, walnuts, sunflower seeds, celery or strawberries. I would have like a bit more crunch so most likely the slivered almonds but really any of those would be a great addition I was just trying to keep the calories under 250 calories.
