Spinach Butternut Squash Frittata
 
Ingredients
  • 12 oz butternut squash, peeled and cubed ~ 6 large eggs ~ 4 egg whites ~ 1 cup spinach ~ ½ cup feta ~ 1 cup mozzarella ~ Pinch of salt and pepper ~ 2 TBSP Coconut Oil ~ ¼ cup diced yellow onion ~ 2 cloves garlic
Instructions
  1. Heat oven to 400 degrees. Microwave squash and ¼ cup water in covered dish for 5 minutes. In a bowl whisk eggs, egg whites salt and pepper and set aside.
  2. Heat the coconut oil in a skillet over medium heat, add the onion and garlic saute' for approximately 2 minutes. Add the spinach, increase heat and cook until the spinach reduces in moisture. Incorporate the squash and cook an additional two minutes. Pour the egg mixture on top, and sprinkle with the feta and mozzarella. Reduce heat to medium and cook approximately 2 minutes or until eggs become slightly firm.
  3. Place mixture into a metal or glass pie pan and bake at 400 degrees for 10 minutes or until set. Let it cool for about 5-10 before cutting and serving.
