Paleo Chicken Salad
 
Ingredients
  • 1 (9.75oz) can chicken breast, drained ~ 1 (5oz) can of tuna in water, drained ~ ½ cup dates ~ 1 cup shredded carrots ~ ½ green apple, diced ~ ½ cup mayo ~ ½ cup pecans, crushed ~ ½ tsp garlic salt ~ ½ tsp onion powder ~ salt and pepper to taste
  • Mayo:
  • 1 large egg ~ 1 TSP lemon juice ~ 1 TBSP Dijon mustard ~ ¾ cup of Coconut Oil
Instructions
  1. Combine all ingredients into a bowl leaving the mayo for last. Mix in the mayo, coating all the ingredients. Place on a few romaine leaves, some tomato slices and serve.

  3. Blend all ingredients together using an immersion blender or a mixer, pulsing for about 15-20 seconds.
