Ringing in the New Year

Now that the bubbly is starting to fade are you thinking fondly on the past year and all you have accomplished, or are you making deals with yourself to make 2013 YOUR YEAR!!

Do you make resolutions or do you set goals? For me I like to set goals not just at the first of the year but throughout the year as well. This gives me the opportunity to adjust as needed or to change paths if I found one goal didn’t meet my “life plan” after researching it further.

Do you try and make goals or resolutions for all areas of your life? For example work goals, health goals, monetary goals, relationship goals. In my opinion it is important to try and improve all areas of your life to make it the most balanced.

A few of my goals for 2013 include:

1. Read or listen to 12 Self-Improvement books – so important to always work on yourself to be the best person I can be.

2. Train for and run a half-marathon – this is a big goal but I am hoping it gives me a push in my fitness

3. Grow this blog of mine to 500 subscribers – lofty goal but heck – shoot for the moon. So feel free to share this blog with your friends!

4. Connect and engage more with my current friends and new friends – sometimes life gets so busy and we forget to slow down and just enjoy it! This is really an excuse for me to not clean my house!! 😉

Healthy Eats – Garlic Cauliflower Breadsticks

Those who know me understand my love to bake. It helps me reduce stress. Something about following all the steps, keeping my mind from going to my many to-do lists. You know the Walmart list, the grocery list, the house project list, the I want to cook list etc. What you don’t have that many lists??? Call it the type A personality in me, but baking helps. Well not for the waistline so I bring it all in to work and make them suffer!! 😉

Needless to say I am trying to COOK more, I tend to cook once on Sunday and reheat during the week. It keeps me on track for eating healthy, but ANYHOO!!! So in my desire to find healthy alternatives and low cal favorites to mix into my everyday cooking I turn to Pinterest! Who doesn’t?? You are in the dark ages my friend if you haven’t jumped on the bandwagon… so what are you waiting for… go, go NOW!

So this past weekend I wanted to find a healthy alternative to pizza or breadsticks. What did I find?? Garlic Cauliflower breadsticks! Say What? Yeah that was my thought exactly! How can cauliflower taste like pizza?

Here is how my version came out:

 

 

 

I followed the recipe almost exactly (missus a little of the cheese).  My only side note is the next time I make it, I might put it under the broiler for a few minutes to make it a little crisper.  It was a little on the soft side so it made it harder to hold like a breadstick. Otherwise it was totally YUM and I will make it again for sure!
