Oh, How Pinteresting!

I have been stuck in spreadsheet hell!! So to give myself a break I indulge in some Pinterest indulgence. Oh how I love it! What have you been pinning lately? I would love to connect with you too for some more inspiration! So if you haven't already go ahead and add me on Pinterest!

Taste of Tuesdays: Greek Chicken

Shortly after I graduated from college I started to teach myself how to cook. I found this recipe for Greek Chicken and I absolutely loved it. I moved out and I must have misplaced the recipe book that had the recipe, but to this day I still remember the taste of that chicken. I wish I remembered the recipe but trying to recreate it has been fun. This is my version of this recipe….so far.

Greek Chicken

Ingredients:

1 pound of chicken

1 cup of chicken stock

1/4 cup of white wine vinegar (apple cider vinegar can be used as a substitute)

1/2 Teaspoon of crushed garlic

pinch of rosemary

pinch of thyme

1/4 cup of diced tomato

feta cheese

olive oil

Directions: Add olive oil to the pan and lightly brown the chicken on both sides (approximately 2 minutes on each side). Reduce heat to medium and add the chicken stock, white wine vinegar, crushed garlic and seasonings.

Greek Chicken

Cover pan and simmer for 10-12 minutes. Add the diced tomato and cook for an additional 1-2 minutes. Just long enough for the tomatoes to absorb some of the liquid. Plate the chicken scoop a little of the stock and tomato to the chicken and sprinkle with the feta cheese. Dig in!! The white wine vinegar makes the chicken very tender and juicy. This is one of my favorite chicken recipes.

P.S. I didn’t cook a whole pound and I use a really large pan. The stock should just about cover the chicken so I suggest a 9 or 10 inch pan.

Weekend Update

This weekend was a hard one. Besides a little bit of shopping and snuggle time with Seamus I stayed in for the most part. I think I needed it anyways since this was the first weekend in a while that I didn’t have outside plans. This weekend was all about rest (aka like six naps).

Inspiration Board

I try to write a positive message on my chalkboard for the week. A reminder to stay positive throughout the week.

Protein

I got in some new protein powder that I ordered. So excited to try these new flavors. I even used the Raspberry Cheesecake to make some protein popsicles. You can find the recipe here.

hair products

I am seriously addicted to hair products. Anything that can help keep my long locks hydrated and healthy I am all for it.

Puppy

I literally took six naps this weekend, Seamus kept me company and took a few naps too. Gosh he melts my heart with his cuteness.

End of Watch Movie

In between naps I enjoyed the movie End of Watch. It was a little gruesome and gritty at times but it was really good. A good inside look at what cops go through. How they put themselves on the line everyday. A few tears were shed so be prepared.

Greek Chicken

Finally a little teaser for tomorrow’s taste of Tuesday. This Greek chicken was a long time coming. Trying to re-create a recipe I lost.

Protein Popsicle

With the weather finally starting to heat up what bettter way to stay cool than with a healthy popsicle. Browsing the popsicle aisle I didn’t see any that weren’t full of sugar, even the supposed real fruit versions. So I turned to my favorite fuel source PROTEIN! This has very few ingredients and all you have to do is blend and freeze. Think you can handle it?

You can thank those savvy PR people for putting these popsicle molds at the end of the supermarket checkout aisle. Genius!

Protein Popsicle

Ingredients:

1 cup of water

1 cup of almond milk (could use coconut, or soy but I think almond tastes best)

1 scoop of protein powder (I used CytoSports Musce Milk in Raspberry Cheesecake)

4-6 whole frozen strawberries

Directions:

Add all ingredients to a blender starting with the water and almond milk. Fill your popsicle trays and freeze. I had a little mixture left over, go ahead and drink up ;). Pull it out of the popsicle mold with a little warm water and enjoy. You can add a little sugar free syrup if you like.

Saw It. Pinned It. Did It. – Hair Dryer and Straightener Organizer

This project would be better completed on a day when it’s not windy. The item falling down, dirt spraying around (adding texture) etc can really mess it up. Just sayin, for the sake of prevention, not that it happened to me. 😉

I originally planned to screw this to the inside of my bathroom cabinet however it may have taken longer to dry due to above mentioned challenges. I will be attaching to the cabinet this weekend though. If you want you can do without spray painting it if you plan to hide in a cabinet, it can also be screwed to the wall so feel free to decorate it up. Add glitter, glue twine or colored yarn around it, stencil a pretty design on it. Whatever your heart fancies.

PVC Pipe – Wye Shape Size: 3x3x2. Cost: $3.86

Spray paint or other decorating supplies

Wood screws – 10 x 3/4 if attaching to a cabinet Cost: $1.18

Just place your hair dryer and straightener in the openings and you are done! Easy as pie!

Okay now that I finished the project I will say screw this to a wall or cabinet, it is not heavy enough to really stand alone. I apologize for the final pic, boy howdy I didn’t realize all the color clashes that would happen in that pic.  Talk about COLOR!! LOL. I do LOVE this as a storage solution though. Might even add some straight PVC too for all my brushes and curling irons.
