I have been on a salad kick lately. Really forever, my Dad used to make us eat salad before every meal and instead of hating it, I love it! There really isn’t anything I won’t toss on a salad. Well except for anchovies because gross! Any vegetable, fruit or nut is fair game though.
Directions: Grill corn and asparagus on the grill or in a small saute pan. Boil the eggs for about 10-12 minutes. Place lettuce on a plate. Top with the remaining ingredients. Toss in your dressing of choice, I used Fig Infused Vinegar with some salt and pepper.
I had considered adding in pineapple, slivered almonds, walnuts, sunflower seeds, celery or strawberries. I would have liked a bit more crunch so most likely the slivered almonds but really any of those would be a great addition, I was just trying to keep it under 250 calories.
What random ingredients do you like in your salads?

Not weird at all! You can easily substitute for another lean protein.

Okay so you’re my hero for posting this salad recipe. I NEED this in my life. I tend to add in eggs or grilled chicken too with my salads for the protein. 🙂 Now I really fricken want a salad….

hard boiled eggs in salad are my absolute favorite! They add so much protein and great taste!

I did buy it. I use it on just about every salad I make it is so good. I find it at just my local supermarket but I think people have found it at Whole foods too.

I’ve had the worst food aversions to salad and anything green. It’s the WORST and I don’t know how I’m going to make it through the summer because shoveling yummy salads like the one you made above has always been a refreshing go-to meal for me when it’s hot out!! Does pasta “salad” count as something healthy? lol 😉
Hopefully it passes. Have you hit the second trimester yet? I couldn’t live without salad, okay I could but that would make me sad. Haha! I am not sure it counts as healthy but it sure is delicious! 😉
