In Honor of St. Patrick’s Day I am bringing you an easy recipe to help you get into the spirit. It can easily be put together in just over 30 minutes.
I used the Sandies Shortbread cookies with Pecans but you can use the options without pecans if you prefer. If Pistachio is not your thing you can use a vanilla, french vanilla, cheesecake or coconut cream flavor and add green food coloring.
This would be a great dessert for your corned beef and cabbage dinner. Remember everyone is Irish on St. Patrick’s Day! 😉
How are you celebrating St. Patrick’s Day?
Are you wearing green today?

These look good and they seem light after corned beef and cabbage. My Nana used to use pistachio pudding mix in a cake she made….this made me think of her. Thank you. 🙂 Happy St. Patrick’s Day! Sláinte!
Kerry says
Thank you. Yes, it is very light and you can make the servings as small or as large as you want.

Mmmm toffee bits are my favorite! This looks delicious and so festive!!! My grandma used to make a cake using pistachio pudding with a cream cheese based pie crust and this sort of reminds me of that. I haven’t had it in forever!
Kerry says
The toffee really adds a nice crunch and flavor. I think it’s time to bust out that recipe!

Thank you. I have a drawer that is specifically for holiday trinkets. I love being festive. I don’t normally wear green though so I only have one green top. Ha!
