In Honor of St. Patrick’s Day I am bringing you an easy recipe to help you get into the spirit. It can easily be put together in just over 30 minutes.
I used the Sandies Shortbread cookies with Pecans but you can use the options without pecans if you prefer. If Pistachio is not your thing you can use a vanilla, french vanilla, cheesecake or coconut cream flavor and add green food coloring.
This would be a great dessert for your corned beef and cabbage dinner. Remember everyone is Irish on St. Patrick’s Day! 😉
How are you celebrating St. Patrick’s Day?
Are you wearing green today?
St. Patty's Shortbread Trifle
- Shortbread Cookies ~ 1 oz box of Instant Pistachio Pudding Mix and 2 cups milk ~ 8 oz tub of Cool Whip ~ Toffee Toppings
- Make pudding according to the packaging.
- Allow to set for at least 30 minutes.
- Crush up the shortbread cookies.
- Spoon the crushed cookies into the bottom of a serving cup or bowl.
- Top with the pistachio pudding
- Sprinkle a bit of the toffee bits onto the pudding.
- Top it all off with the whipped cream, and a few toffee bits. Voila!
These look good and they seem light after corned beef and cabbage. My Nana used to use pistachio pudding mix in a cake she made….this made me think of her. Thank you. 🙂 Happy St. Patrick’s Day! Sláinte!
Thank you. Yes, it is very light and you can make the servings as small or as large as you want.
Mmmm toffee bits are my favorite! This looks delicious and so festive!!! My grandma used to make a cake using pistachio pudding with a cream cheese based pie crust and this sort of reminds me of that. I haven’t had it in forever!
The toffee really adds a nice crunch and flavor. I think it’s time to bust out that recipe!

You need to run out and get them. So easy to put together! 🙂
So, I kind of failed in the green department. I always remember St. Pat’s Day because I have a good friend whose birthday is today, but I always forget to wear green! Those look so good! 🙂
Thank you. I have a drawer that is specifically for holiday trinkets. I love being festive. I don’t normally wear green though so I only have one green top. Ha!
um, yum! this looks ridiculously easy and delish. I am not wearing green today – totally forgot, oops!
It is so easy to put together! Oops. That’s okay, but don’t forget to have a drink later! You know, to celebrate! 😉
Oh yum, yes please!!! I think I have most of these ingredients at home!! I might have to make these tonight!
Oh that is great! My vote is yes! 😉
Oh – I wish I would have seen this earlier!! I made a berry trifle to take over to some friends tonight for dinner. This one would have made more sense today!!
Oh bummer! You can always make it another night.
Delicious and easy recipes like this are my favorites! This one would be perfect for a last minute party.
