I wanted to make a nice light, fresh salsa for the summer to enjoy with some chips and margarita days on the patio. This recipe was the perfect mix of sweet with a hint of heat. The crunch of the red onion and the smoothness of the watermelon and pineapple really makes a great balance of texture.
Directions: Dice the watermelon, red onion, and place in a bowl. Sprain the pineapple tidbits but reserve the juice for use later. Add the pineapple to the watermelon mixture. Sprinkle with the salt. Mix in the lime juice and pineapple juice and stir till fully incorporated.
Watermelon Pineapple Salsa
Ingredients
- ½ Mini Watermelon, diced (approx 2.5-3 cups) ~ 2 cups Pineapple tidbits (20oz can) ~ ½ TSP lime juice ~ ½ red onion, diced ~ ½ TSP salt ~ ½ TSP Pineapple juice
Instructions
- Dice the watermelon, red onion, green onion, and place in a bowl. Sprain the pineapple tidbits but reserve the juice for use later. Add the pineapple to the watermelon mixture. Sprinkle with the salt. Mix in the lime juice and pineapple juice and stir till fully incorporated.
- Enjoy with chips or spoon onto grilled chicken, or eat it by the spoonful

Don’t be afraid to try dipping sliced cucumbers, or celery, in that or any salsa! In fact, you’d be surprised how many Mexican restaurants will bring you a small plate of sliced celery for your ‘chips and dip.’ (if they can make a bloody Mary, they can supply celery.) 🙂
This would also be great with grilled chicken or mild white fish. Yum! Thanks for sharing!
Kerry says
Yes, that is a great idea! I had it on top of Grilled Chicken and I really like it. Thank you.
