If you know me or been to my house you know my freezer is 90% frozen bags of veggies. Currently I had about 5-8 half full bags of veggies and I really wanted to get rid of some of them. You know to make room for more veggies. Crazy girl logic right there folks! I remembered baking this Chicken Pot Pie recipe for my Dad when he was recovering from knee replacement surgery and thought it would be a great way to use up some veggies. I didn’t want plain old chicken though, and since I am Portuguese I had to add Chorizo. This is a little spicier version of Linguica in case you are unfortunate enough to not have tried this delish sausage before.
Ingredients: 1 package of Chorizo (sometimes called Chourico) ~ 2 cups frozen mixed vegetables (I used a corn and peas mix and a sliced zucchini) ~ 10 oz. Heavy whipping cream ~ 1/4 lb. (4 oz.) VELVEETA®, cut into cubes ~ 1 sheet frozen puff pastry (1/2 of 17.3-oz. pkg.), thawed ~ 1
Bake for 30 minutes or until crust is a deep golden brown. Let stand 5 minutes before serving.
Willing to get a little spicy?!

you and davida (from the healthy maven) should have a cookoff and then LET ME BE THE JUDGE BECAUSE ALL THE FOODS NEEDS TO GET IN MY BELLEH!
Haha!! Sounds like a brilliant idea!! This was one of my favorite dishes I have ever made, it is going on repeat! It was easy to make too.

I never buy chorizo. I should.
You should!!! It is the tastiest sausage I have ever had in my life!! Okay that may be a little dramatic but it is good!

Sounds good! I love pot pie. I watch a top of Top Chef, and they’re always talking about chorizo. ha!
I grew up on it so I am glad it is making the rounds on Top Chef! I hope more people try it because it is such an awesome flavorful sausage.

I love chorizo. It’s my breakfast burrito protein of choice, ha!!
Oh that is the best! I had it in an omelet once and it was AMAZING!! Can’t go wrong with it!
I’ve never bought that type of sausage. How spicy is it on a scale of 1-10? lol
Haha!! It’s not so bad, when it’s by itself it’s about a 6, but in this dish more like a 4-5. If you like Mexican food or buffalo chicken you can handle it. It is more a kick than a burn your throat kinda thing!
Oh My Goooonessss!!! YUM!! This sounds fabulous! Thanks for linking up!!
Thanks!! It has quickly become my favorite dish I have made! Such a great blend of flavors.

I love pot pies, and I think my husband loves them even more! I have yet to try chorizo, but I hear so much about it. This sounds delicious!
It is my favorite kind of sausage. It has a little kick but not when it is mixed in this dish!
This looks so yummy and comforting! I love chorizo and never would have thought of adding it to a pot pie!
Thank you! Adding Chorizo may have been the best decision ever!! 😉
I think I may try this minus the puff pastry – I have to be gluten free – but this really does sound amazing. My husband would love it!
You will have to tell me what you think if you make it. It is one of my new favorite dishes.
