If you know me or been to my house you know my freezer is 90% frozen bags of veggies. Currently I had about 5-8 half full bags of veggies and I really wanted to get rid of some of them. You know to make room for more veggies. Crazy girl logic right there folks! I remembered baking this Chicken Pot Pie recipe for my Dad when he was recovering from knee replacement surgery and thought it would be a great way to use up some veggies. I didn’t want plain old chicken though, and since I am Portuguese I had to add Chorizo. This is a little spicier version of Linguica in case you are unfortunate enough to not have tried this delish sausage before.
Ingredients: 1 package of Chorizo (sometimes called Chourico) ~ 2 cups frozen mixed vegetables (I used a corn and peas mix and a sliced zucchini) ~ 10 oz. Heavy whipping cream ~ 1/4 lb. (4 oz.) VELVEETA®, cut into cubes ~ 1 sheet frozen puff pastry (1/2 of 17.3-oz. pkg.), thawed ~ 1
Bake for 30 minutes or until crust is a deep golden brown. Let stand 5 minutes before serving.

I grew up on it so I am glad it is making the rounds on Top Chef! I hope more people try it because it is such an awesome flavorful sausage.

I’ve never bought that type of sausage. How spicy is it on a scale of 1-10? lol
Haha!! It’s not so bad, when it’s by itself it’s about a 6, but in this dish more like a 4-5. If you like Mexican food or buffalo chicken you can handle it. It is more a kick than a burn your throat kinda thing!
