I don’t really like the word snack as I don’t really have snacks. I more so have mini-meals. I eat approximately 5-6 meals a day. The weekends I have more time to be a little creative with my food and during the week I tend to re-heat food I prepped on the weekend. Call it boring if you will but I am always pressed for time during the week so grab and go is the only way I can manage.
Breakfast: This was perfect for my early morning hike. It had a little bit of everything while still being low on calories.
A low carb wrap with 2 TBSP natural peanut butter, 1 TBSP sugar-free strawberry preserves, 1/4 of a banana, 2 sliced strawberries and 2 TBSP of gluten free granola.
Mid-morning snack: I normally don’t eat eggs twice in one day – normally my protein would be chicken, tuna, or greek yogurt if I am having eggs for dinner. The side is made up of a whole tomato, 3 oz of cheddar cheese, 3 stalks of asparagus, and a balsamic vinegar, EVOO and crushed garlic dressing.
Lunch: Like I said grab and go. After a workout I don’t want to think about what to eat. So I grabbed an apple, a whole grain salt free rice cake and natural peanut butter and kielbasa. I eat so much chicken during the weekend so the kielbasa is a welcomed change.
Mid-Afternoon Snack: This was a new concoction for me and I gotta say I kinda love it! This was three stalks of celery, organic almond butter and 12 almonds.
Dinner: This is like my standard weekday dinner (this was from Monday night post workout). I can normally eat this every night with just the veggie being rotated out. I sprinkled the asparagus with Mrs. Dash’s onion and herb. The Egg White scramble I make with 3-4 cup egg whites and 1 whole egg. I must have ketchup with my eggs but doesn’t photograph well so it is not pictured! Who is with me on the ketchup on their eggs? Anyone?
What are some of your healthy go to snacks?
Tori G @ Styled Like A Rockstar says
You are so healthy! I need to follow your meal plans ASAP! I put ketchup on everything to the point it may be gross for other people to witness lol
Kerry says
Thanks, Tori! I try to eat healthy at least 90% of the other time. Other times I am trying not to scarf down a pizza! 😉 Seriously ketchup is a vegetable and I am sticking to that so I don’t feel guilty for covering my eggs with ketchup! LOL
Kim @ Racing Bananas says
You’re breakfast wrap looks delicious! What a great idea! I may need to take a day off from oatmeal and give that a try!
Kerry says
Thanks! I normally do a protein shake or overnight porridge but this was so delicious and a much welcome break from the norm! Hope you give it a try!

I HAVE TO have ketchup on my eggs! Darren thinks I’m disgusting, but it’s the best combo ever!
Kerry says
How does he NOT?! LOL! It is the best! Eggs feel naked without ketchup!
Kayla @ Blondes Have More Run says
OMG…LOVE kielbasa. I’m polish, so it’s a huge hit in my whole family, especially on Easter. And I’m with you on the mini meals throughout the day!
Kerry says
I love kielbasa! I love having it every so often. I don’t think I could ever go back to eating just three meals a day. My tummy starts growling if I go too long without a mini-meal! 🙂
Kayla @ Blondes Have More Run says
me neithe, especially since I run, I’m pretty much constantly hungry. No one else around me understands! 🙁 haha
Kerry says
I totally get it!! I am training for a half-marathon so I feel like I am always hungry!

Same here. I’m all about mini meals now that are all about the same size. Somedays I’ll have a “snack” of a banana, but mostly I’m just like you with the 3+ meals a day.
At first I thought your meal with asparagus was popcorn. Lol. that certainly would have been an interesting combo! Haha.
Love the snack idea of celery with nut butter and the almonds! I bet those who hate ants on a log because of the raisins would totally be into that!
Kerry says
Totally agree – most mini-meals are right around 200-300 calories. Popcorn would have been interesting! LOL!
I want to add raisins but trying to stay away from the naturals sugars for a little bit, though I will be adding them in the near future! 🙂

So that breakfast wrap you made…yeah I see that happening in my kitchen ASAP. Looks delicious 🙂 Love that you use real peanut butter…
Kerry says
Thanks! You should totally make it! It was so yummy and a nut butter or pb2 would not have been the same! My name is Kerry and I am a peanut butter addict! LOL!

Thanks, Heather! Gotta love Pinterest for saving the day! I can’t tell you how much money and makeup I have tossed!
