Happy Friday!!! What you mean it’s not your Friday today?! Well it is mine!! {Happy, Happy dance}
It is a nice 4 day weekend for me. Call it a mental health day or a staycation but it really is all about not working!! The end of the Gov’t fiscal year brings lots of stress and October brings like a million reports so this is my time to decompress!! There will be lots of naps, lots of walks with Seamus and probably 2 a day workouts. I am so looking forward to it.
So I haven’t participated in awhile in What I Ate Wednesday because my food has been all over the place. So here we go!!
Breakfast: This weekend I started off the morning with some Eggs and Bacon with a slice of low carb bread. Such a great way to start the morning and lots of fuel!
Morning Snack: Caramel Salt Free Rice Cake – with a Jif to Go cup of Peanut Butter
Lunch: My go to favorite salad with 2 cups of romaine lettuce, tomato, red onion, cucumber, feta and 4 oz of chicken
Afternoon Snack: Small Pink Lady apple with Chobani 0% Greek Yogurt and a sprinkle of Orange sugar free jello powder.
Dinner: I think this may be my new favorite dish! I love Chorizo and using it to make a Pot Pie was amazing! Not to toot my horn or anything. I have had this for dinner 3 days in a row!! For the recipe click here.
BONUS: I didn’t eat this but I did make it in my cake decorating class. I did make the same cake and frosting last week and I did get a “this is hashtag amazing” from a co-worker. It is just a plain yellow cake and buttercream frosting. The roses and the frosting are the hardest part.

Love the jello powder in the yogurt! I once put crystal light in my yogurt and I was surprised at how well it worked! I had forgotten my stevia and I don’t like it plain, but that worked wonderfully!
Yes, it is very similar to using Crystal lite but I think jello has more flavors. It really makes Fat Free Greek Yogurt a little tastier!
I never thought to mix jello mix in plain greek yogurt – genius!
It totally adds flavor without adding sugar (when you use the sugar-free kind) and a lot of calories or fat! There are so many flavors too!
eggs, toast and bacon (sometimes) is my fav breakfast. i never tire of it! i only eat bacon on occasion but i love it every time.
It is a rare treat for me too but I will eat the heck out of it when I do make it!! Bacon in all the things!! 🙂
Seriously… I need your motivation to make real breakfast like that…OR I need you to be my personal chef 🙂 I can pay you in manicures and dog kisses. Hahah
I reserve real breakfasts for the weekends. During the week it is protein shakes made with my eyes half closed!! Though being paid in manicures and puppy kisses sounds like the best gig ever!!!
Do you use dressing on your salads?
I do, I really don’t like a dry salad! I usually will do a mix of balsamic vinegar and Extra Virgin Olive Oil (EVOO) and some crushed garlic, salt and pepper. Stop and Shop has a Pear Infused Balsamic Vinegar that I am obsessed with right now. It is a little pricey but the bottle lasts a really long time! If I am using bottled dressing I usually go for the Ken’s Brand Ceasar dressing.
I love starting my day with eggs. This week egg salad for me. I need to change it up every once in a while.

Yeah I go through spurts of eating it too much then getting sick of them. Then I love them again! I so need it stressed to the max lately!
All of those things sound amazing. Especially the salad, which looks simple with huge payoff. I love meals like that!

Oh, I’ve never thought about flavoring yogurt with jello – what a brilliant idea! And that cake looks amazing!! I’ve always wanted to take a cake or cupcake decorating class!
It is so good and really adds a little bit of flavor! You should try a class. It is so funny learning and who doesn’t love cake!! Haha!
