Happy Friday! I am so excited that I have this day off. I hopefully will get out to the hiking trails to enjoy it, after the insurance adjuster comes out and takes a look at my basement again. I am also heading out for another girls night for a beer tasting. I am just hoping my liver can stand a third night of drinking, I am not 21 anymore. Wish me luck.

After a really horrible book I was so glad to pick up a nice light and fun book. I didn’t want to put this book down and I can’t wait to read the next book in the series.

Eggplant parmesan is a favorite of mine too…but it’s been too long since I’ve made it! Mmm I only discovered eggplant a few years ago, but it’s such good stuff! Even just sauteed with garlic. I love ‘mug of the week’ idea!! Hope you enjoy hiking this weekend!
