Considering that I was on a mini-vacation from Friday to Tuesday my eats were all over the place. Saturday was Seamus’ vet visit and I was on the road most of the day. Sunday we celebrated my cousin’s daughter graduation from High School and her basic training send off. Monday and Tuesday I spent all day painting and re-decorating my main bathroom. This made getting in my regular meals quite a challenge. Also I made it through the first two weeks of limited carbs so now I am moving on to a little higher carb count and finding the balance of the right carb zone my body can handle before it starts to gain. So you will see a little more good carbs added back in. Yeah for some fruit!
Breakfast: At Seamus’ vet appointment I found out he gained one pound over the year so he is going to boot camp. So morning walks are going to be added and our afternoon walks will be longer, so my lack of functioning in the morning means I am sticking with my trusty protein shake for now. Snack: I am reintroducing my apple and walnuts or almonds for my midmorning snack. Oh, how I have missed my apple. (recycled pic, I didn’t have the peanut butter since I already had it with my protein shake)
Lunch: I had to grab a quick salad before getting back to painting. So the quickest thing to make is a salad with some pre-cooked chicken. I happen to really like salad so it is a win/win for me!
Dinner: This is my idea or not so “Parm” – Chicken Parm. I didn’t want to bread the chicken so I grilled some chicken with some garlic powder, onion powder, and italian seasoning. Then I placed the chicken on a pizza tray and added some low carb pasta sauce and a slice of Mozzarella cheese (fold in half and place on the diagonal to cover the chicken) then stuck under the broiler for 1-2 minutes, just until melted. Keep an eye on it, it goes quick!
I served with Steamfresh lightly sauced creamed spinach.
I am human and I have to admit I did have a slice of some Grasshopper pie that I made for the graduation party on Sunday. I have to say it was totally worth it. It is one of my favorites. It is Pistachio pudding, crushed pineapple, and Cool Whip. For the recipe click here.

You have been staying on track big time. You’re doing so well. Is this keeping you full? You have a good variety, good amount of fruits and veggies. And I love your shake recipe. Good job love!!! You deserved a piece of the pie you worked so hard on 🙂

Thanks! I am usually never hungry. I did miss my afternoon snack due to the hectic painting schedule for my bathroom and running around so that would add in another 200-300 calories. If I am still hungry I would add in a whole cucumber or 1-2 cups of veggies which isn’t a lot of calories but would help me feel full. I so loved the pie!!! 🙂

i dont exercise at all when i’m on vacation but i also don’t throw my clean eating out the window either; i figure that my clean eating will balance out my lack of exercise 🙂

Me too!! I try to eat as clean and healthy as possible so a treat or two doesn’t make a huge difference. I do try to workout a little bit even it is a hike, a walk or painting 😉 but if I don’t I try not to stress over it.

I made it myself. I cook all my chicken for the week on Sunday. This one was just regular Perdue chicken then I marinated in Sweet Baby Ray’s Honey BBQ sauce and cooked on the grill. Then I just pull a piece or two out and re-heat.

I’m going to give that chicken a try. Looks so easy and yummy. Re: your comment above, you cook all your chicken on Sunday and eat it through the week? Do you just keep it in the fridge or freeze it? Does it keep that long if just in the fridge? My rule of thumb has always been like 3 days MAX for cooked chicken..hmm..

It usually lasts me from Sunday to Thursday or Friday. I haven’t had any issues but if you don’t feel comfortable with it I would suggest just cook batches twice a week like Sun/Wed. I just put the cooked chicken in the fridge, portioned out in 3-4 oz and then just pull and re-heat.

I just found your blog and I’m a huge fan of the apples and light snacking throughout the day. I’m definitely going to try some of these. Great post and tips, following you now. I need to go have some fresh fruit and almonds now. 🙂

Thank you! Yes I much prefer lighter meals and snacks so I never get completely ravenous!
