As I mentioned on Friday I am trying to go Paleo as a way to be healthier and detox my body. It is also a great way to lose weight if you follow it pretty closely. I am down 7 pounds in the first week which is mostly bloat and water weight so I will be interested to see how this week goes.
The basic premise of Paleo is to eat as close to the caveman did back in the day. Basically anything unprocessed, think fruits veggies and proteins. The hardest part for me will be cheese, diet coke and the stevia/truvia for my coffee. I have switched to tea and just water for now. In the book I was reading they do allow for a 85/15 ratio of eating on plan and off after the initial 30 day detox. Most gauge how they feel after eating certain foods. Most likely I will be incorporating Truvia or stevia back in for just coffee. It is not too far off how I’ve eaten before minus the cheese, but I wanted to try a few new meals. This one popped into my head during my hike so I stopped at the grocery stores for ingredients.

Ingredients: Roughly a Pound of Boneless Pock Chops ~ ~ 1 Apple ~ 1/4 Apple Cider Vinegar ~ 1-1/2 cups of Stock ( I used Organic Veggie Stock) ~ 1/2 Tomato ~ 1-2 Medium Zuchini ~ EVOO ~ Garlic Powder ~ Onion Powder ~ Salt and Pepper to taste
Instructions: Trim the pork chops if that is your preference. Pat the seasonings into the pork chops with the garlic, onion, salt and pepper. Heat the EVOO for a minute in a saute pan, then add the pork chops. Sear for about 2-4 per side. Add the apple cider vinegar and the stock to the pan, the stock should be a little more than up half the sides of the chops.

Have you ever made zoodles?
Could you go without coffee for 30 days?

- Instructions: Trim the pork chops if that is your preference.
- Pat the seasonings into the pork chops with the garlic, onion, salt and pepper.
- Heat the EVOO for a minute in a saute pan, then add the pork chops.
- Sear for about 2-4 per side.
- Add the apple cider vinegar and the stock to the pan, the stock should be a little more than up half the sides of the chops.
- Chop up the apple and add to the pan. Reduce to medium-low and cook for about 10 minutes per side.
- Dice up the tomato and let it simmer for another 2-3 minutes. Remove the chops, apples and tomato from the pan with a slotted spoon.
- Leave the stock in the pan and add in the zucchini noodles, increasing to a boil.
- Allow to cook for about 4-6 minutes. Plate and serve.
There are no words besides YUM!! I seriously need to get a spiralizer – I want to make zoodles so badly!!
Yes! You need one. I got mine at Bed Bath and Beyond. It’s just the hand held one but it works really well.
Great job. I was just reading about Paleo. We definitely are what we eat. Sugar is a big killer. I have eaten so much sugary stuff in my 58 years, my body is rebelling. You do very well with exercise, too. Filing this in my recipe folder
right now.
Keep on hiking and eating well.
Love, SMD’s Momma
Sugar is such an addiction. I think it just makes sense to eat as little processed food as possible and to get only natural sugars from fruit. Much better way to eat and live. They do believe in a few cheats here or there but mostly unprocessed.
Nice plating! Like a boss!
Why thank you! Learning as I go!
Putting the Zoodles in the Stock? WHAT AN AWESOME IDEA! Check you out!
Man oh Man! You make me hungry!
Thank you! It was bred from being so hungry!! Hehe! Hope you try it!
Wow Kerry, this looks super gourmet… great job.
PS: I would love for us to see Asking Alexandra in December. What are your thoughts?
Thank you! It felt fancy but really easy to make too!
mmm yum. this looks so fancy aka i could never make it lol. seriously this looks like something you order at a restaurant.. yum!
It is all in one dish you can do it!!
Love the idea of the zoodles! Such a perfect dish for fall!
It was really nice to have a healthy alternative to pasta.
I LOVE zoodles!!! this looks AMAZING
Aren’t they so good! Much better than carb heavy processed pasta!
HOLY YUM! I’ve never had zoodles before this looks fabulous 🙂
It is really good and in the sauce they really soften up just like spaghetti.
This looks amazing! I want to do a show (if the neck heals) and I will need new meal ideas since I burn out on stuff.
No coffee for 30 days?! I don’t really want to but I have been considering it. We will see how that turns out.
It is so easy to get bored with meals! It has been tough since I am tired but I am drinking one caffinated tea but no sugar or cream. I think my body got so used to coffee it was no longer effective.
I have got to get on the zoodle wagon!
You do! It is so much healthier and not difficult at all. Much fresher too!
man oh man does this look tasty!!
It was really good and I am not much of a pork chop person.
This sounds so good! And anything that can be cooked in one pan is definitely a winner in my opinion!

I know, saves so much time not having to use so many dishes! Thank you.
This looks delicious! A+ for presentation! 🙂 Any sugar detox issues? Can you eat beans with paleo?
Thank you. I’m trying. I had a headache for one day but I had some protein and was better. No beans, grains, dairy, or peanuts. Basically you want to be as unprocessed as possible. Meats, veggies and fruit.
I need to buy a spiralizer. I think I’ll do that today.
I don’t like pork chops but my husband has been craving them. Maybe I’ll do this for him. We’re not doing Paleo but we’ve been doing low carb so this should work just fine.
As for going a month without coffee, I can absolutely do that since I don’t drink coffee ever anyway 🙂
It makes really nice noodles. Perfect for low carb diets too. Lucky! I miss it so much! Hehe.
That looks so good!! Congrats on the weight loss!
Thank you. It was like it just fell off.
Wow, that’s really good for even loosing that much water weight in the first week! Now, maybe I should start this Paleo craze… especially with this amazing recipe. Loving the one pan action! 🙂
Thank you. It is good even if just for a quick reset and overall just eating healthier and less processed food. Gotta love easy!
I do love me some zucchini noodles! That’s prob my favorite veggie. But I could never give up cheese. NEVER. Even if I was lactose intolerant. #yolo
It is so good and can be used for really any pasta dish. Cheese is a hard one but I don’t miss it as much as I thought but I will be having a piece here or there.
This sounds so good! I would love if you would share some tips for going Paleo!
I am not a pro or anything but I can certainly share some tips of what I am doing.
This looks delicious!! I cut coffee from my diet last week, too, so we can be missing coffee together!
Thank you. Yes, it is rough but we can do it!
