Happy Thursday everyone!! Who is ready for the weekend? (I imagine everyone is raising their hands, am I right?)
On any given day I can consume up to a bag and a half or two of veggies. Being able to disguise some of them in the form of a “burger” or “cake” is okay by me!!! Enter in these little gems. Do they not look delish or what?!

You will need:
1 bag of thawed and well drained chopped spinach ~ 2 egg whites ~ 1 whole egg ~ 1/4 c diced onion ~ 1/2 c shredded cheese ~ 1/2 c bread crumbs (I used a lower carb option crouton) ~ 1 tsp salt ~ 1/2 tsp garlic powder
*I added a bit more onion and measured croutons whole before crumbling.
Mix all the ingredients into a bowl, and form your patties. You have the option of doing rather than cakes I just prefer the cakes for even crispness.
Place on a heated skillet on Medium, spray with a non-stick spray and cook for about 4-6 minutes on each side or until desired crispness. Keep a close eye on those suckers. The second side always seems to go quicker for me.
Then plate and enjoy. I added a little of Tzaziki on top which is super low calorie and tastes amazing. Feel free to anything else you want like salsa. Hope you enjoy!!
