One of my goals for the year was to try 6 new foods. I am not the most adventurous eater which is putting it mildly. However I have tried 3 (chickpeas, zucchini, and Brussel sprouts) this year after making this salad. After seeing it on That Fit Chic’s blog I knew it was something I was willing to try even though Brussel sprouts seem to be that love or hate veggie.
Ingredients: Brussel Sprouts (one bag) ~ 3-5 slices of cooked bacon ~ 1/4 cup of walnuts (or nut of choice) ~ 1/4 cup of feta ~ 4-5 cubes of pineapple ~
Chop the Brussel sprout stem and slice. Chop the bacon, walnuts and the pineapple. Mix and add your favorite dressing. Since this is my first time trying Brussel sprouts I am not sure how it should taste however it was a little dry and really crisp. I may blanch or steam them a little bit to loosen it up a little or mix this in with a little romaine. Again since I am a newbie with this veggie it may be normal for most, it is a cabbage so you may be used to it. Either way I did like it and will be adding this to me list of healthy sides.
P.S. I had this as a side to my dinner on Sunday and then for lunch with Chicken on Monday. I will say I like it much better the second day. I think the texture was just something I had to get over. It is a good substitute for lettuce when trying to venture further out of your comfort zone. Give it a try!

Thanks! I was not sure about this as I would put Brussel Sprouts in my “Not gonna happen” veggie list but the recipe made it more salad like so figured worth a try. Could even try it with mayo or greek yogurt to make it a “mock pasta salad” too. Hope your family tries it!

I don’t get why brussel sprouts have such a bad rep! They are yummy, but then again, I’ve only had them roasted with salt and pepper. I’m not sure how I’d like them raw. Also I’m not a huge salad person… BUT I’m glad you tried brussel sprouts.
My first reaction to “6 new foods” for the whole year was, “That’s it? Just 6?” Then I started thinking…and I really can’t recall the last NEW food I tried. Maybe brussel sprouts showed up this year. But beyond that, I can’t think of any! So 6 is much bigger than I thought. Good for you. And good luck 🙂

I will try roasting them next. I wanted to start small with only 6 because really I am picky and eat mostly the same thing different ways, so this pushed me a little without being overwhelming. It is a great way to push yourself out of your comfort zone but so far I am liking the new recipes.
