Oh, How Pinteresting!

This week is flying by so quickly! I feel like I haven’t been pinning a ton this week due to being so busy but for reals a lot is subjective. I also apologize in advance since I think getting another puppy has been on my mind, hence a lot of dog pins. Total cuteness though.

Taste of Tuesday : Healthy Tuna BLT Cups

This recipe could not have been easier, let me tell you!! Who doesn’t know how to make Tuna salad, or stuff a tomato?! This is also the most adaptable recipe to fit your taste. So many options for fill-ins, the sky is the limit.

BLT-6

Ingredients: One Medium size tomato ~ 1 can of tuna or chicken (whichever you prefer) ~ Tzatziki (I use this in place of mayo, another good alternative is greek yogurt) ~ red onion ~ salt ~ pepper ~ crushed garlic ~ lettuce ~ Bacon bits ~

Optional Add-ins:

Chopped Walnuts ~ Celery ~ Pickles [this is my favorite but I was out 🙁 ] ~ cranberries ~ grapes

Okay, okay you get the point, you can pretty much add anything based on your calorie needs.

BLT-1

Directions:

1. Mix Tuna, red onion, garlic and tzatziki and add seasonings to taste.

BLT-2

2. Cut the top of the tomato like you are carving a pumpkin. Scoop out the insides (save them for a salad, add to the tuna mix, or toss)

BLT-3

3. Fill tomato with lettuce, add tuna mixture and sprinkle top with bacon bits.

BLT-4

I cut the tomato into eights and gobbled up post workout with a protein shake.

BLT-5

I will be making this again but I may use a thinner or smaller tomato to allow all the flavors to really pop, versus it being mostly tomato.

Weekend Update

I feel like I got so much accomplished this weekend. I love starting the week feeling like everything is in done rather than having a full to-do list going into the week. Most of the things on my list got completed even some that have been on my to-do list for weeks now.

Friday it was a last minute scramble to complete a birthday gift before Saturday.

The finished project, I think it was a success.

The calm before the storm and Seamus was just a lazy bones. I guess not so shocking since he woke me up at 4:30 am. He is so stinking cute though I can’t really be mad.

Rocking out my pink Converse sneaks for the first time this Spring. Love them.

Took Seamus on a walk around the lake. Can I just say I LOVE living so close to a lake. It makes my heart full.

The Birthday Boy!  Can’t believe he is one already.

Lastly, Radioactive by Imagine Dragons has been seriously on heavy rotation during my gym sessions this weekend. So loving this song.

Saw It. Pinned It. Did It. – Wooden Picture Frames

Is it really Thursday? Wow this week has really flown by for some reason. This weeks SPD project was by request by my best friend Heather Feather. She was actually with me when I purchased the supplies a few weeks ago. Since she wants to possibly repeat this project she requested I post on my blog. Heather big hugs girl, this one is for you!

The inspiration for this project was a combination of a few different pins so see here and here.

PIN THIS

You will need:

~ Wood Block/Frame ~ Mod Podge or Elmer’s glue  ~ Picture ~ Foam brush or paint brush ~ Acrylic paint ~ Picture Hangers ~

Step 1. Paint the wooden frame with your base color and allow to dry.

Step 2. Turn picture over and cover back with Mod Podge.

Step 3. Turn picture back over and center over frame and press down. If needed cover with a book so it stays flat until it dries.

Step 4. Attach picture hanger to back of frame and hang on the wall.

(Isn’t my Dad handsome?!)

Done!

The thing I love about this project is it is so customizable. (Is that even a word?) You can stencil words on the frame, add upholstry tacks to the corner of the pics to spice it up, or paint the wood in a rooms coordinating colors to add a pop of color. My living room has red accents so I just might add a red block in the very near future, I already have the paint too, BONUS!

Oh How Pinteresting!

Can I just say I love my new gym so far! The guys are so helpful in showing me new exercises and moving all the weight plates back to the racks. Yes there is still the cheesy dude that is already trying to hit on me, but for the most part the dudes are embracing the lone chick moving in on their weight room. Since I am at the gym 6 days a week it is so good to finally be at a gym that doesn’t stress me out trying to get there. The machines are always free and no waiting. People are just so friendly there, sorry I am gushing but I really think of the gym as my second home.

Well anyhoo!! Wednesday means sharing all our Pinterest glory so we can pin more stuff we may or may not ever make. I think it gives me more incentive to complete more projects! Win, win! (This is really me just trying to justify all the stuff I pin)

Taste of Tuesday: Pumpkin Protein Pancakes

Who doesn’t like pancakes? A warm sunny Sunday, wrapped in blankets and breakfast in bed. Fluffy pancakes in a warm syrup….wait where was I. Drooling a little sorry. So needless to say trying to get healthy means finding a more waistline friendly pancake option. So mixing and matching a few recipes and you get Pumpkin Protein Pancakes. For my Coconut Protein Pancakes recipe click here.

You will need:

3/4 cup of egg white substitute

3-4 Tbsp almond flour

1 Tbsp canned pumpkin

Sprinkle of nutmeg

Sprinkle of cinnamon

2 packets of Truvia or Stevia in the raw

Mix all ingredients in a bowl and place in a heated pan and cook like a regular pancake. Seve with warmed sugar free syrup or fresh berries.

This couldn’t be any easier, tastes delicious and very healthy alternative to high carb pancakes.

Weekend Update – Pups, Pastels and Projects

one. The life and times of a Pomeranian/Sheltie, outakes and all. Come On….can he get any cuter? I think not. Love my little man.

two . Am I the only one who gets excited about organizing? Finally won’t have to dig through my tool box for a picture hanger or nail.

three.  Trying to force spring to reveal itself through bright and cheery nail polish. Hope it works!!

four. Bought some new kicks. Excited to break them in this week at the gym. Working out seems easier with new sneakers.

five. It was a hard decision but I went with the Essie color Mint Candy Apple. Spring, Spring come out to play!

To Tri or not to Tri

So the other day I received in the mail my Triathlon magazine subscription renewal and it makes me wonder, should I get back into triathlons?  I originally got into Triathlons after reading Lance Armstrong’s It’s Not About The Bike. I figured heck it is better to DO it than read about it. I liked the idea of having three events to train for, keeps it from getting boring. If you are bored with one that day you can mix it up with the other two.

Let me tell you, training put me in the best shape of my life.  After mourning the loss of my kitty I gained like 5-7 pounds and it is time to start getting lean. Swimsuit season is coming up. I never got into Triathlons to be the best of the best, I just wanted to challenge myself and my limits. It is the most amazing feeling crossing the finish line and knowing you worked your butt off to get there.  The race day only lasts so long, it’s the training that is the fun part. So with joining the new gym maybe it’s time to get back to a healthy and fun hobby again. I’ll keep you posted.

P.S. Yes, I looked like a hot mess but getting up at 3 a.m. is not my friend. Crossing the finish line I doused myself with much needed water. What a feeling!!

Saw It. Pinned It. Did It. – Sea Glass Jars

This has to be fastest project i have ever completed. Which was a neccesity since I went straight from work, to home grabbed my pup, then to my Brother’s to celebrate my Niece’s birthday. I got home really late. Totally worth it! Look at these two cuties!!

You will need:

Food Coloring of your choice ~ Elmer’s glue ~ Glass jar ~ paint brush or foam brush ~ plastic cup or dish to mix

This was not an exact science. I added some glue to the bottom of the plastic cup and added about 6-8 drops of the food color. Mix and paint onto the glass jar.

I waited about 30 minutes and painted a second coat. I mean can it get any easier? I think not!
