Friday Favorites – Vacation Road Trip

In just a few hours I will be heading out of town and will be hitting the open roads for a fun road trip to North Carolina. Hopefully this work day goes by fast!! Just warning you I may not show up much next week to blogland except for maybe a recap so don’t go forgetting me. Let’s get to it, shall we?!

Favorite Song: I am going country again this week since I am going South and I more than likely will be listening to a lot of it this weekend. Nothing wrong with a man who wants to do what we like!


 

 

Favorite News Story: See that teardrop on his face that means he has murdered someone, and he’s charged with a weapons felony. Didn’t stop the over 23,000 people from liking the photo on the Stockton CA Police Facebook page. Many woman commenting about wanting to do very bad things to him. This is what is wrong with social media!  For the full story go here and here for the facebook photo really the comments are hilariously stupid.

Favorite Recipe: This German Chocolate Fudge from Simply Gloria just looks so decadent, and with a caramel coconut center and I am hooked. It doesn’t hurt that she is so nice too!

Be The Change | Summer Bucket List

I am going to try and make this short and sweet because I am shoving two things in one post. I didn’t get a chance to do a Random Act of Kindness this weekend but I do have an update from last week’s Dog Rescue and PSA, the owners (really it was the wife) had asked for my address and because I don’t do well being on the spot thinking on my feet I gave it to her. I figured she just wanted to send a thank you card. I didn’t want to mention it before because I figured people would judge me for being stupid and naive but I do believe in the good of people.

Well this past week I got a thank you note and $20.00 in the mail. It was so sweet and not necessary at all since I would do it for any dog in need but the good thing is I already have my next Random Act of Kindness planned that this will go towards. Full circle, right there people!

There is so much I want to do this summer that I am not sure I will have the time to do it all but I am certainly going to try. I really like just walking to the lake by my house sitting on the beach with a book but I really need to do more. Enjoy more experiences and really push myself to make things happen. So my list for the summer is going to help with this, but I am leaving it open to add more if I need or want
to.

 

~ Be a tourist in Boston for a day
 

~ Read 20 books – Are you following me on Goodreads?
 

~ Eat from a food truck
 

~ Take a “Real” vacation – North Carolina in just over 24 hours!! Woohoo!!
 

~ Sit by a Bonfire
 

~ Complete my basement and half bath renovation – I need to find a contractor! Ugh!
 

~ Hike a 4,000 elevation mountain – more than likely in New Hampshire

 

~ Go camping/sleep in a tent 
 

~ De-clutter my home office

Corn and Asparagus Red Leaf Salad

I have been on a salad kick lately. Really forever, my Dad used to make us eat salad before every meal and instead of hating it, I love it! There really isn’t anything I won’t toss on a salad. Well except for anchovies because gross! Any vegetable, fruit or nut is fair game though. 

 

 

Corn and Asparagus Red Leaf Salad
Ingredients: 2 cups Red Leaf Mix lettuce ~ 1/4 cup grilled corn ~ 1/4 Cup grilled asparagus spears ~ 2 hard boiled eggs – sliced ~ 1/2 Red Vine Tomato ~ Salt and pepper to taste

 

Directions: Grill corn and asparagus on the grill or in a small saute pan. Boil the eggs for about 10-12 minutes. Place lettuce on a plate. Top with the remaining ingredients. Toss in your dressing of choice, I used Fig Infused Vinegar with some salt and pepper.

I had considered adding in pineapple, slivered almonds, walnuts, sunflower seeds, celery or strawberries. I would have liked a bit more crunch so most likely the slivered almonds but really any of those would be a great addition, I was just trying to keep it under 250 calories.

Father’s Day Weekend

Is it Monday already?! I am hoping this week flies by so I can be on my way to Maddie’s. I am getting so excited for the road trip. Am I the only one that loves road trips? I get to blast some tunes, clear my head, and just hit the open roads.

 

Since Friday was Friday the 13th I decided to bust out the old movies. Nothing like a night of old horror flicks. I must say that they are not as scary as I once thought they were but seeing Kevin Bacon from back in the day was a trip. Yes, those are VHS tapes. Don’t be jealous! 😉

Saturday: Since the weather was on and off showers I didn’t get to go hiking or kayaking. I did get some shopping done though. I hit Old Navy and scored 45% off. I scored a few maxi dresses, and some boyfriend capri pants. Then I went to the bank, and the post office. I sold my old iPod touch that I haven’t used since getting my iPhone. Nice change in my pocket. Though Amazon doesn’t pay out for like 3 weeks, say what?!

After a trip home to walk Seamus and have lunch I headed out for my haircut. I really must remember to not wear black so often since it doesn’t really show up my dark hair against the black. I couldn’t really get a great picture. I took Seamus for another walk, went grocery shopping then read for a bit before passing out on the couch.

 

Sunday: I love waking up and reading to help wake up and I am really trying to finish this book so I can move on to some more light hearted books. Recently it is a lot of deep books. I need some summer reads. Then I did a workout, before getting ready to head to my brother’s to celebrate father’s day.

 

I got my Dad a Samsung Galaxy Tablet with Internet service. It was interesting teaching him how to use it. I already gone one IT request call from him so I expect a few more! Haha! He really hates having his picture taken so none taken of him. 🙁 The food was amazing, my SIL made some steak and chicken on the grill. She also made potato and pasta salad. My nieces were a hoot too playing in the pool and squirting the hose.

I headed home around 4pm and took Seamus for a walk, read for a bit and then finished OITNB while catching up on blogging.

Friday Favorites – Keep Smiling

Happy Friday! This week has been so busy at work so it has flown by. I am looking forward to this weekend though. I am hoping to either hit the beach or go kayaking on Saturday. I am also really excited to give my Dad his gift for Father’s Day. I hope he likes it! Let’s get to it so we can be closer to the weekend!!

 

Favorite Moment: This week, deciding to spend my vacation traveling to go see my girl Maddie. She has come up numerous time to see family and squeezed in visits with me so I am returning the favor and going to her. So the countdown begins! One week to go!! I can be spontaneous just not often! 😉 

Favorite Song: Back to my roots and going rocker girl it’s Disturbed with Indestructible. This songs just always makes me want to run harder and faster!
