After the trip to North Carolina and girls weekend in Rhode Island it is time to lock it down and eat healthy. In order to do that I need to get in some veggies. Broccoli is one of my favorite veggies so this one popped into my head on the way home from girls weekend. Anything that makes it easier to eat more veggies is okay in my book. This one was quick to put together and was really light tasting. Much better than a carb filled potato salad, so bring it to your next BBQ and fill your plate to save calories!
Ingredients: 1 Head Broccoli (approx. 2-3 cups) ~ 1 Apple ~ 1/4 cup sunflower seeds ~ 1/2 shredded carrots ~ 1/4 cup red onion diced
Directions: Boil head of Broccoli for 5 minutes until slightly fork tender. While it is cooking dice the red onion and the apple, add to a large mixing bowl. Add in the sunflower seeds and the carrots. Mix the dressing ingredients. Once the broccoli is done, chop the heads off the stems and place into the large bowl. Add the dressing and toss until fully coated. Refrigerate for 30 minutes and serve.

Potato salad is so good, but keeping it light right now is a must! Haha!
Jana @ Jana Says says
I wished I liked sunflower seeds. I guess I can always leave them out, right? Because other than that, this looks really good. I might have to make it this weekend at my inlaws’. So there’s something healthy.
Kerry says
You can totally swap them out for sliced almonds or even cashews or leave them out all together. You could even add celery to get some more crunch too.
tori says
This seems super easy and yummy. Perfect for a weekday night after work!
Kerry says
Thank you. Yes, it was really easy and not a lot of work or mess.
SMD @ Life According to Steph says
Looks great, I’ll leave the apple out, but otherwise I’m putting it on my list.
Kerry says
Thank you. Let me know how you like it. A little celery could add the same crunchiness you would get from the apple. Otherwise totally would be fine without it.
Emily says
I love adding sunflower seeds to my salads! This looks yummy!
Kerry says
It is such a great way to add some protein and healthy fats. Thank you.
Nichole says
Yummm! I love ‘slaw of any kind. Though I have never used white balsamic…is it less sweet?
Kerry says
It isn’t really sweet but it helps to liquify the mayo, and add a bit of flavor.
Lindsay Templeton says

Kerry says
Thank you. Hope you give it a try.

What a perfect Summer salad!
Kerry says
It was very light and the perfect side side. Thank you.
Jessica Gardner says
So yummy!! I wonder if you can use plain greek yogurt instead of mayo. I haven’t had mayo in so long I am not sure I could stomach it.
Kerry says
I am sure you could, though I didn’t try it. It isn’t as thick so it might get a bit runny.
jackie says
this looks delish and easy. and much healthier than a lot of picnic-y type foods which is a good change too!
Kerry says
Yes, I tend to always want to bring something healthier so I know there is at least something I can eat.
Kim says
Oh – this looks so good – I love stuff like this in the summer!
Kerry says
Thank you! It is much healthier than some of the alternatives.
Amanda says
Yum! I’ve never had a version with apples in it before!

The apples add a really nice crunch. It is a new favorite.
Jodi says
My mom makes a broc salad w/ raisins, bacon and poppy seed dressing and it is so good!
Kerry says
You can never go wrong with bacon!! A lot of people seem to like using poppy seed dressing. I can’t say I’ve ever had it though. Might have to try it.
Stacia says
Sunflower seeds! What a brilliant addition to a salad! I’m thinking about going vegan-ish so I’m gathering up all the unique and wonderful salad ideas that I can. 🙂
Kerry says
Thank you. Sunflower seeds are always on hand in my house. I tried vegetarian but vegan sounds hard. Though you are halfway there already, you can totally do it!
Jessica says
Love the fruit and veg combo! Great summer side.
Kerry says
It really helps with flavors and textures. Thank you.
Christy@SweetandSavoring says
Yum! I’ve never made a salad with broccoli before. I love that you used sunflower seeds, one of my favorite salad add-ins. I’ve gotten really into tossing toasted sesame seeds into everything lately, too 🙂
Kerry says
Sunflower seeds are a favorite of mine and much easier to chew than almonds. 🙂 They are just so good!
Krystal says
Pinning it!!! Just what I need for my cleanse/diet!
