My obsession with Chorizo is in full force lately. There really isn’t anything I can’t add Chorizo too. This weekend I was craving Nachos so when I saw this recipe for Bacon Nachos in the Taste of Home magazine I knew I was going to make my own version.
Heat the refried beans in the microwave approximately 2-3 minutes.
Place a handful of tortilla chips to a plate. I used the Green Giant Veggie Tortilla Chips but any tortilla chips will do.
Sprinkle the diced tomatoes on top of the chips. Dallop the refried around the chips. Place the chorizo on top and then add the Greek Yogurt on top.
I could tell you that I was trying to be healthy so I left off the Cheddar Cheese, however after grocery shopping I was hangry and I forgot to add it. I wanted to get my eating on so I totally forgot it. If you want the cheese you can add it on top of the Chorizo and melt in the microwave for 1-2 minutes or until the cheese is melted and then add the Greek yogurt. I can say that I didn’t think it needed the cheese but I will be trying it with cheese too.
What do you like on your Nachos?
- Tortilla Chips ~ ½ package of Chorizo ~ ½ medium tomato, diced ~ ⅓ cup refried beans ~ ¼ cup Greek Yogurt or Sour Cream ~ 1 TBSP Olive Oil ~ 8 oz Cheddar Cheese, shredded (Optional)

I make a lovely dish we call taco dip with
Lots of beans and ground beef , salsa, cheese
Peppers hot and regular and onions. Taco seasoning
And garlic salt. No measuring lol. It’s similar

This recipe look so good! The grilled chorizo we had on Sunday was really good… I really like the spicy flavor but it’s a bit dry eating it by itself (compared to Kielbasa or those type of sausages) so I want to use it in a recipe next time. Thanks for introducing me to it! 😉

Yes, it can be a little drier than Kielbasa. My SIL’s mother adds some kinda sauce to her ground Chorizo for sandwich’s. I must ask her the next time. You really can add it to almost any recipe. Glad you liked it.

yum! nachos are one of my fave things. i normally just use doritos (so unhealthy i know), black beans and cheese (and sour cream of course) but adding diced tomatoes is a great idea. my husband would love the chorizo as well. yum!

Haha! I bet Doritos would be good. The Veggie Chips were Ranch flavored so probably a healthier version of the Cool Ranch. Hope you give it a try.
