I have mentioned this in the past but when I go hiking I tend to get a lot of my ideas for recipes, DIY projects, and blog posts. It could be the stillness of the woods, or the amount of time in the woods but it allows my mind to wander and dream. I use my phone to sometimes jot down the ideas.
This past weekend I was thinking up what I wanted to make after my hike. This sandwich came to mind, I used to love it as a kid and I hadn’t had it in a long time. As a kid it was Pastrami on plain white bread with yellow mustard. I wanted to make a more grown up version that felt a little gourmet. I originally was thinking of using Gouda buy when I saw the Gruyere at the store I knew I wanted to give it a try. I knew I wanted to add the pickles to add the crunch but if pickles aren’t your thing, you could add cucumber, or peppers. The Honey Dijon sauce melts all the flavors together. Don’t worry about the horseradish, it is just a little bit of heat but with all the others flavors it really melds well together.

Directions: Mix the Honey, Dijon and Horseradish in a small bowl and set aside. Bring a pot of water to a boil and place the Pastrami in the water, season the water with salt and pepper and allow to boil for 5-6 minutes.
Butter one side of sourdough bread place in skillet, spread the dijon sauce on the bread, pile on the Pastrami.

Top with the Gruyere cheese, and pickle slices.

Do you have a childhood favorite that you would want to update?
What is your favorite sandwich?

Spread the dijon sauce on the second piece of Sourdough bread and place on top, spread butter on the bread. Flip the sandwich once it is nicely browned on the bottom and allow the bottom to brown. Remove from heat and cut in half.
I’ve been waiting for this since yesterday!! My stomach is literally growling right now!! This looks incredible! I love gruyere cheese!! 🙂 xo, Biana
Aww thanks. Hope you decide to make it. Gruyere is not one I buy often but it is so good.
Those pickles are a family favorite. The whole thing looks awesome. Lately, my husband and I say we do not even know what we feel like eating. So much of so many kinds of foods are available to us. As my dad says,
we have too much. Growing up, it was eat what we had and what we could afford. I never had take out or even pizza until I was in my mid teens. Our take out was flounder on Fridays from the place up the street.
Times have way changed. Both parents working changed everything. I got off on a tangent! LOL
Thanks for the recipe. Have a happy day.
Love, SMD’s Momma
They really add a nice crunch. It is amazing the things older generations had to survive on. We certainly have way more choices which is good and bad. Hope you give it a try.
BREAD. omg that bread. that sandwich. WHAT ARE YOU DOING TO ME??
Haha! Sorry, I know you are trying to coming up with bread options but this one was so worth it.
oh man does that look yummy!! get in my belly!
Thank you. I am so glad I had leftover ingredients to make another sandwich. 😉
looks delicious except for the pickles. i don’t like pickles lol
You could totally leave them off or replace them with something else with a bit of crunch.
Not a huge pastrami fan but I LOVE grueyere cheese!!!!
Gruyere is such an under appreciated cheese. So good!
This looks so good! I love pastime sandwiches! We had them over spring break, but nowhere near as fancy 🙂
Thank you. I loved them as a kid but it’s fun to put a new twist on them.
Yep…this looks right up my food alley…YUM!
Hope you try it out. I wanted seconds and thirds! 😉
I’m so hungry after these pictures!! Looks SO delicious!!
That is an awesome compliment, thank you so much! Hope you give it a try.
After I saw that sandwich from your last post I couldn’t wait for this recipe!! Thanks for sharing that looks so good!!!
Thank you. Hope you make it. It was perfect for post workout.
Honey dijon is one of my favorite things on earth!! This looks so good. And how you get ideas from hiking, I always get ideas while running – definitely should make us want to stay in shape to keep our blogs going, right??
Love honey dijon!! Yes, the more we work out the better our ideas! Haha! Good motivation.
It looks good! Hold the horseradish on mine!
Thank you. That is totally possible. 🙂
HOLY DELICIOUSNESS this looks amazing 😀
Thank you. It all melted together so well, I was happy with how it came out and it hit the spot.
This sounds delicious and so easy! I should make it for Michael to take to lunch sometime!
Thank you. It was a great meal for after my hike. Hope you give it a try for Michael.
this looks absolutely delicious. i can’t remember the last time i had pastrami – used to have it all the time as a kid as well!
Me too. It was so long ago but I used to love it as a kid. Gotta admit I still love it! 🙂
OOoo. Doesn’t this look amazing!!
The honey dijon really worked well with the cheese. Totally hit the spot.
Oh wow this looks awesome!! I love gruyere cheese and the addition of honey dijon.
The honey dijon really worked well with the cheese. Totally hit the spot.
Oh my gosh, yum. I would love this.
Thanks! It is worth making, at least I hope so.
This looks delish! I can see why you chose a grilled sandwich considering how cold your hike was! I always see such great recipes and then I have to decide which I will *actually* do – and this is something I would! Thanks for sharing.
Thank you, yes warm was in order after the snowy hike. That is so good to hear, I try to make things that aren’t too complicated.
That sandwich looks so so good! All those ingredients…just yummmmmm!!!! And the fries too, because you gotta have a side of something 🙂
Thank you. I really liked the combination. You have to have fries and sweet potato fries are a little healthier. 😉
This looks divine! Although Im not eating bread these days I’m pinning this for a rainy day!
Thanks! It is worth it on a cheat day. 😉
Oh my gosh this seems totally do-able…like even I could do it! YAY! SO excited to try this out!!
You can totally do it, just like a regular grilled cheese. Hope you try it.
This is my fave type of sandwich to make. I am a sucker for anything grilled and this looks amazing!!! I miss bread soooo much mostly because I know for a fact that I could live on grilled cheese sandwiches alone!
Grilled cheese is one of my favorites. You could always try an open face style to save on some of the bread for a cheat meal.
Those pickles look so good!!
I don’t know if my food looks good or that’s the pregnancy talking! Either way thank you! 😉
YUM! You could use any meat you like too!
Absolutely, and meat would do.
I can’t believe you made that- it looks straight from a restaurant! I’m the plainest person ever when it comes to sandwiches but I loove pickles & that dressing sounds delicious!
Thank you! Best compliment ever! Sometimes plain is best but it is nice to spice it up a bit too.
This looks insanely delicious! I wish I could reach through the screen and eat it right now!!

Thank you. It was so yummy I am going to have to make it again soon!
