I am enjoying the day off due to Snowmageddon and this Frittata is going to help keep my energy up enough to shovel out all the snow. While it does have cheese it can easily be removed for Paleo diets. Hope all my other east coast people are staying warm!
Directions: Heat oven to 400 degrees. Microwave squash and 1/4 cup water in covered dish for 5 minutes. In a bowl whisk eggs, egg whites salt and pepper and set aside.
Heat the coconut oil in a skillet over medium heat, add the onion and garlic saute’ for approximately 2 minutes. Add the spinach, increase heat and cook until the spinach reduces in moisture.
Incorporate the squash and cook an additional two minutes.

This looks delicious!! It has been quite awhile since I had a frittata and I really like that you used different ingredients than what I would have thought to use!
Kerry says
Thank you. They are so easy to re-heat too. Perfect for lazy mornings.

Kerry says
It is really good, I’ve been having it for breakfast every morning. Filling but also light too. Sure, sure rub it in that you can go outside! Hahaha!
Kelly says
This looks really good. I like the feta…the salt must give it a great savory element that complements the sweetness of the squash.
Kerry says
Thank you. Feta and Spinach are my favorites! It really brings out all the flavors!
Justine says

Every time you post a recipe, I get annoyed that I have to cook for other people because this is something I would totally enjoy while, sadly, the family would not and I hate feeling like I’m a restaurant. Although. I can make this for lunch one day while they’re not home…
Kerry says
Or just make it for yourself and have it for lunch for the week! 😉
Meghan @ Champagne & Suburbs says

Claire says
Oh this looks incredible! Given that I live in a four month snowmageddon in Sweden, I’m always on the lookout for cosy, healthy recipes, and will definitely give these a go – thanks!
Kerry says
Four months?? We had a light Winter until this past blizzard and I’m over it already! Haha! This really helps for those days in.
Marie says
That looks so good!! Hope you made it through the blizzard ok. I was thinking of you when I saw on the news how much snow you got. I think we got like 25 inches. The city is a mess and the streets are not plowed that well at all. Then you have these massive snow banks all over the place. Walking and/or driving is not fun.
Kerry says
Thank you. It was brutal, I ended at about 32 inches. The snow banks are the worst because you can’t see around them at all.
Nichole says
This looks SO good! Would you say the squash makes the fritatta watery at all?
Kerry says
No, not at all. It is very similar to adding potato just healthier. It firms up rather nicely.
Ragan Wesson says
Yum! I’ve never made a frittata but I’ve always wanted to! You have inspired me to give it a try 🙂
Kerry says
That is great news. It’s not as hard as it may seem. Very similar to an omelette.
