I was feeling so impressed with myself for having all my drafts written for the week and then I realized that the monthly book post isn’t until next week. Womp Womp. So I texted my girl Maddie and she agreed to let me re-post the recipe I used to guest post on her blog. Maddie is the first blogger I ever met in real life. She is my Southern Belle, with a penchant for Bourbon and bacon. Could she be more perfect? She also hosted me at her house down in North Carolina, and we had a blast. I think taste testing this recipe has been my most favorite so far. It’s light and airy but full of flavor. Worth cheating on your diet to enjoy one!

Batter: 2 cups flour ~ 2 TBSP Sugar ~ 2 TSP Baking Powder ~ 1/2 TSP Salt ~ 1/2 TSP Ground Cinnamon ~ 1/2 cup cooked Bacon, chopped (approx. 6 slices) ~ 2/3 cup milk ~ 2 eggs ~ 1 cup water ~ 2 TBSP Bourbon (I used Evan Williams) ~ 2 cups Apples, diced (approx. 2 medium sized apples)
Bourbon Sugar Glaze: 1/2 cup brown sugar (pack it down tight) ~ 1 TBSP melted Butter ~ 1/4 cup milk ~ 1 cup powdered (confectioners) sugar ~ 1 TBSP Bourbon

NOTE: If you find the mix too runny add more flour by the tablespoon, until the desired consistency is reached. If it is too thick add water by the tablespoon. You want it to look similar to a pancake batter.
In a skillet or saute pan heat oil to 375 degrees. Place batter into the oil using a tablespoon. You don’t want them to be too big or they won’t cook throughout. These cook up fast so have a metal slotted spoon handy to flip them.
Mix up the glaze and serve.

These are something I’d totally eat (like, scarf down) but never make. I rarely use oil on the stove top, it’s a PITA to me!
I totally had to stop myself from scarfing them down. I keep an empty pickle jar to put the empty oil in once it’s cool. That saves some of the hassle, and you don’t need a ton of oil for this one. Or make someone else make them for you! 😉

Pumpkin fritters sounds really good!! Apple will always be my favorite but fritters are good with just about anything.
