As I am trying to work in more Vegetarian dishes into my diet I am finding all sorts of wonderful veggie dishes. This one is light while still being filling. This one is going in heavy rotation for sure. A little bit of veggie, and a little bit of cheese, yes please! This could easily be doubled or tripled for a summer BBQ.
Ingredients: 2 TBSP Caesar Dressing ~ 2-1/2 Cups frozen sweet whole kernel corn ~ 1 cup frozen sliced Zucchini ~ 1/2 Cup Yellow Onion – diced ~ 1 cup Mexican style Shredded Four cheeses ~ 1/2 cup 0% Greek Yogurt ~ 1/2 cup tomato – chopped Optional: Ham or Bacon Adapted from this recipe.
Directions: Heat a skillet on medium-high heat and add in the dressing, onion, corn and zucchini. Cook until the veggies are fork tender approximately 8-10 minutes.
Turn the heat down to medium and remove pan from heat , stir in the cheese, and Greek yogurt until combined.
Place the pan back on the heat and cook approximately 3-5 minutes or until the cheese is melted. Be sure to stir frequently so as not to scorch the veggies. Sprinkle in the diced tomato and mix to incorporate. Serve.
This is perfect as is for a good Vegetarian dish, but if you aren’t a Vegetarian and want to bulk it up you can mix in some Ham chunks or a few strips of cooked bacon crumbles. I ate this as a main dish with a side salad.

Looks as good as it probably tastes! Very colorful. I have not used Greek yogurt in any recipe yet and am curious to try it. My favorite barbecue dishes are the traditional macaroni salad and potato salads.
Barbecue makes me think of non-vegetarian dishes the most!!! We got a smoker last year and chicken wings on the smoker are now my favorite, the next favorite being ribs.
Can’t wait till the weather is better for outside dining!

Thank you! Oh you should it is a great alternative to sour cream and you don’t really taste it in this recipe. I love a good potato salad. Chicken wings and ribs in the smoker must be amazing!

That looks delicious! I love corn dishes and never thought of pairing it with squash. I usually use black beans. The yogurt must give it a really creamy texture. Definitely have to try this! Thanks. 🙂

Haha! Thanks! You can substitute a veggie if you want. I usually start with a combination of recipes or an idea and modify the crap out of it.
