I picked up a few new cookbooks this weekend that I am excited to try out. All are paleo recipe books, as I am trying to get back to eating healthier but I think the recipes are for anyone wanting to try a few new healthier recipes. The stress at work threw me off for awhile but looking forward to getting back to a healthier lifestyle again.
The first book I tried out was The Paleo Kitchen, and I have already tagged more than a few pages of recipes I want to try. I made the Meatloaf, and the Cranberry chicken salad, with a few modifications. Here is my version.
Mayo: 1 large egg ~ 1 TSP lemon juice ~ 1 TBSP Dijon mustard ~ 3/4 cup of Coconut Oil
Directions: Combine all ingredients into a bowl leaving the mayo for last. Mix in the mayo, coating all the ingredients. Place on a few romaine leaves, some tomato slices and serve.
Mayo: Blend all ingredients together using an immersion blender or a mixer, pulsing for about 15-20 seconds. You can certainly do it by hand it will just take a little longer to blend.
- 1 (9.75oz) can chicken breast, drained ~ 1 (5oz) can of tuna in water, drained ~ ½ cup dates ~ 1 cup shredded carrots ~ ½ green apple, diced ~ ½ cup mayo ~ ½ cup pecans, crushed ~ ½ tsp garlic salt ~ ½ tsp onion powder ~ salt and pepper to taste

The original recipe called for cranberries so you can easily substitute for that instead of the dates.
