Friday Favorites

Happy Friday! Today is our second Friday that we get out 2 hours early for summer hours.  To say I am excited is an understatement. I have a busy weekend but some fun projects planned, and some relaxing in the sun too. We have a big family gathering on Sunday too so I am excited to see everyone. What do you have planned?

Favorite Cleaning Schedule: I really like this plan for breaking down all the rooms in your house and creating a schedule for really deep cleaning or de-cluttering your home. I seem to always be adding things to my home and I want to work more on doing with less and really minimizing the things I own. 

How do you eat an elephant? One bite at a time, and we'll be decluttering our homes in the same way. Breaking our homes into manageable tasks and scheduling when those tasks will take place will lead to a more organized, decluttered life in the not-too-distant future.

Literary Ladies – Summer Reading Challenge

I  may have joined one too many reading challenges this summer, but it will help to motivate me to finish some of the books on my ever growing list of books to read. When Kay and Kristen joined forces for a pretty simple list of categories I figures it was worth a go. Each photo and book title links to the Goodreads summary page, portions provided in italics below each book. 

 

LITERARY LADIES

Some basic rules: 

The challenge will run from June 21, 2015 until September 21, 2015.

You are allowed 2 rereads for this challenge in order to be considered for the prizes. 

All books must be 200 pages in length. If you are listening to your books, be sure that it complies accordingly. 

The first 3 categories are mandatory. But if you do not like one or two of the other 7 categories, you can skip it and replace it with one of their book club picks!

Taco Flatbread Pizza

I bought some Naan Flatbread a few weeks back and I have been trying to come up with something different to put on it. I originally tried a pizza with mozzarella and fresh peaches but it was a total fail. Then I thought of my favorite food, a taco and this pizza was born.

I tried to make it healthier-ish by using 93% lean ground beef and greek yogurt in place of sour cream but the bread kinda gives it away. I was a little worried about the lettuce but it really added a nice crunch and flavor. 

Taco Flatbread Pizza
Ingredients: 1/2 cup taco seasoned beef ~ 1/3 cup sauce ~ 1/2 cup taco shredded cheese ~ 1/3 cup shredded lettuce ~ garlic powder ~ 1/4 cup diced tomato ~ 1 NAAN Flatbread ~ Greek yogurt or sour cream ~ 1 pound ground beef ~ Taco Seasoning packet

 

Directions: Pre-heat the oven to 400 degrees.  In a Saute pan cook your ground beef until browned and then add the taco seasoning according to the package. 

Spoon the tomato sauce in the middle of the flatbread and spoon outward leaving a 1/2 inch from the edge.

Sprinkle on the lettuce and spice with garlic powder.

Top with the beef and spread the cheese on top being sure to cover the beef.

Place the diced tomato on top and place in the oven.

Cook for 12-15 minutes depending on your level of crispness. Allow to cool for one minute and then dallop on the greek yogurt/sour cream.

Wicked Restful Weekend

Monday we are not on speaking terms! This weekend was so wonderful and you have ruined it. Okay, a little dramatic I know, but it was so nice to not have anywhere to be, and I could just sit and read, marathon watch Orange Is The New Black, and take walks. There was so much I wanted to get done this weekend but I also wanted to just rest. Hopefully I get another one of these weekends soon. 

I Did

 

After a few episodes of Orange Is The New Black and finishing the book The Storied Life of A.J. Fikry I went out for a run/walk.  These trails are really pretty and they go on for miles. I ended up doing about 4.5 miles.

That sign made me laugh, that is some fun marketing. Hey if it gets them in the door. Haha! 

After I got home I laid out in my front yard reading the book Wonder and napping. It was glorious.

Sunday, I didn’t get nearly anything done. I finished Wonder, and watched a few more episodes of OITNB.

I went to get dog food, and stopped at the library to pick up a few books that came in. 

I put a few pictures up in the office and a mail center above my desk. It isn’t finished but it’s getting there. Sunsets from Maine for some inspiration. 

I went grocery shopping and got to the checkout and realized I forgot my wallet, went all the way home, realized my debit card was in my purse. Ugh. Story of my life. 

The rest of the night was OITNB, reading and blogging. Couldn’t have been a more simple weekend and while I didn’t do everything on my list I got to take it easy which was nice.

Friday Favorites | No Plan Weekend

Happy Friday!! It’s been another rough week so I am glad to see this weekend has come. I have absolutely no plans which is perfect. I have a to-do list a mile long though so no worries I’ll be busy. Hopefully I can finally get my office done, with some art and pictures on the wall. A lot of cleaning and de-cluttering planned and also hiking and getting in some sun with a few books to keep me company.
