F#CK CANCER

My Aunt (my Mother’s sister) never wanted to go to regular doctors appointments even when she had issues with her monthly cycles. Turns out that she had cervical cancer. When she got the diagnosis she was given a 6 month time frame to live. I drove 18 hours out to Indianapolis to spend time with her and my Mother. 

We helped her clean, and organize her house and just spend time with her.  I made the journey again a few months later with my brother and now SIL for Thanksgiving. She made the most amazing spread and it was a full on sit down dinner with China and everything. Not what I was used to but so very fabulous. Being able to spend that time with her is something I will always cherish. She made one last trip out to the Cape that I got to visit with her. She outlived that 6 month time frame but unfortunately the Cancer spread to her lungs and soon after she lost her fight.

My Grammy K. has beaten breast cancer TWICE!! My second Dad has beaten Prostate cancer. There is probably not a person out there who doesn’t know someone who has been affected by Cancer. I hope that in my lifetime there is a cure for every type of cancer out there. So whenever I get the chance I always try to donate to finding a cure.

“Hi, I’m Melanie, a Leiomyosarcoma cancer survivor.

I began Relaying as a freshman in 2004 before I even really knew what Relay was.  After my first event, I knew Relay For Life was something I wanted to continue doing.  Cancer, thankfully, had not touched anyone I knew, but I believed in the amazing cause.  

Unfortunately, just two years later, I began feeling very fatigued.  After what I thought would be a simple visit to Mizzou’s Student Health Center, I was hospitalized for a low blood count.  A few transfusions later I was released and a week later, after an upper endoscopy, a tumor was discovered in my stomach.

I traveled home to receive care under some of the best doctors in the country.  On February 14, 2006, I underwent surgery in which they removed the tumor, one third of my stomach, and the bottom portion of my esophagus.  While in recovery in the hospital, we learned the severity of my cancer as I was told I had Leiomyosarcoma, a very rare and aggressive cancer…..”

Plum and Brie Crostini

After a long day on Saturday I really just wanted a nice simple meal so I could curl up and read or watch TV. So I came up with this recipe, because it was simple. Very few ingredients and it can be used well as an appetizer or as a light meal with some fruits, meats and/or cheese.

 

Plum and Brie Crostini
Ingredients: 1 Plum ~ 1 packet of Stevia (or 1 TSP sugar) ~ Brie Cheese ~ Loaf of Bread (I used Ciabatta) ~ Extra Virgin Olive Oil (EVOO) ~ Pinch of salt

 

Directions: Pre-heat oven to 350 degrees. Cut bread into 1/2″ slices, cut in half if using a wider bread like an Italian bread.

Brush both sides with EVOO and bake for 10-15 minutes flipping halfway through. While the bread is baking cut the Plum and blend to a pulp like consistency.

I used my MagicBullet but a food processor or blender would work too. Mix in the sugar and a sprinkle of salt. When the bread is ready spoon onto the bread and top with slices of Brie.

Bake in the oven for 8-15 or until the cheese is soft or slightly melted.

I also made a version with Spinach and Artichoke Hummus with Gouda cheese.

A Feeling of Peace

I don’t know what it was about this weekend but I had a feeling of peace come over me. It wasn’t that I pulled everything out of my office and organized it because that didn’t happen, or that I did even anything of grand meaning. It could have been that I have about a month of weekends free of schedules, or that I just got a lot done without running around too much. Having down time while still being productive is a good feeling.

So what did I do with my time?

Saturday: It was raining when I woke up but Seamus still needed to go for a walk.  Melts your heart, right? I read my book that I talked about here for an hour or so until the rain stopped while drinking not one but two cups of coffee. I headed out for a little shopping, I needed some new bath towels, doormat, and sneakers and I wanted to pick up a gift for a friend. When I got home I did some cleaning and walked Seamus again. He liked the new rug a little too much! I did a workout, had a snack and headed out to the grocery store so I could work on a few recipes. I also finally painted my toes, they have been bare a little too long. Plum and Brie Crostini’s were delicious and perfect for a light dinner, I also made a Spinach and Artichoke hummus and Gouda version.

 

Sunday: I read a short Novella that I won through Heather which was new one from Jamie McGuire of the Walking Disaster series. It is called Happenstance and I started and finished it on Sunday morning.

Review: I knew ahead of time this was a novella and only 100 pages so the pace of the story didn’t bother me when it otherwise would have been an issue. The story of one of three Erin’s born in the same town on the same day deals with how she copes being teased every day and living with a mom who cares more about drugs and alcohol than being a mom.

Weston the star jock decides to break his silence and stand up for Erin, and spending time with her gives him the courage to face his future. The fate of one night turns Erin’s life upside down. We only scratch the surface as to just how much will change but I look forward to reading the rest of her journey.

 

I then worked on some yard work including taking apart an old grill so I could toss it, put down some soil, mow the lawn, and pick up some leaves, setup my water hose and auto sprinkler. I had to spray a Wasp nest too. I got it all done before 10:30am too!! Talk about feeling accomplished. While I was out there I noticed a bird’s nest in another one of my front bushes. This is the second one. It doesn’t have a red beak so I think this is a new one. I haven’t seen the other bird but the tree sort of lost it’s leaves so it may have moved.

After some more cleaning I relaxed and caught up on my DVR queue and relaxed.

 

I can’t believe I did so much and I caught up on a lot of house chores and yard chores, that I actually got the chance to feel bored. That hasn’t happened in a really long time. Yes, I still have a lot I can do in and out of my house but I have time to do it in the coming weekends.

If Friday Makes You Holler

 Happy Friday! This week seemed to drag but I am glad it is the weekend! I have so many things i want to get done this weekend and I don’t have any plans other than to get some yard work done, some spring cleaning, reading and cooking up some new recipes. Before I can get to the weekend though, I have to share my favorites from this week!

Favorite Delivery: I got this month’s Ipsy bag yesterday and finally everything in the bag I am excited to try and will actually use. For $10 I don’t mind one item not being a keeper but nice when i like them all.

Favorite Recipe: I saw this in my new Kraft Foods recipe magazine. It looks and sounds amazing. A Bacon and Chili Queso Fundido dip, yes please! Click on the picture for the link to the recipe.

Favorite Read: I am not finished with this book but I am flying through it. I really needed a light read since I was struggling getting into a book. Sometimes light and fun is needed. This is like the movie The Wedding Date but the male lead is a rough and rugged motorcycle restoration guy and not an escort. He does help out the girl by pretending to be her boyfriend at a wedding weekend.

Wash Me, Please

This Winter was pretty brutal and my car took a beating, the outside, the inside it just was never warm enough to clean it without the soap freezing to the exterior so it went without a wash for months. Now that it is warmer I went to get my car washed and vacuumed out. The amount of dog hair could have allowed me to knit a sweater. No joke!

This is such a necessary but boring task,  what better reward that to have someone else pay for it. Save that money for a pedicure or a coffee!
