Broccoli Slaw Salad

  After the trip to North Carolina and girls weekend in Rhode Island it is time to lock it down and eat healthy. In order to do that I need to get in some veggies. Broccoli is one of my favorite veggies so this one popped into my head on the way home from girls weekend. Anything that makes it easier to eat more veggies is okay in my book. This one was quick to put together and was really light tasting. Much better than a carb filled potato salad, so bring it to your next BBQ and fill your plate to save calories!

Ingredients: 1 Head Broccoli (approx. 2-3 cups) ~ 1 Apple ~ 1/4 cup sunflower seeds ~ 1/2 shredded carrots ~ 1/4 cup red onion diced

Broccoli Slaw Salad
Dressing: 1/3 cup mayonnaise ~ 3 TBSP White Balsamic Vinegar ~ 1 TBSP Honey ~ Salt and Pepper

 

Directions: Boil head of Broccoli for 5 minutes until slightly fork tender. While it is cooking dice the red onion and the apple, add to a large mixing bowl. Add in the sunflower seeds and the carrots. Mix the dressing ingredients. Once the broccoli is done, chop the heads off the stems and place into the large bowl. Add the dressing and toss until fully coated. Refrigerate for 30 minutes and serve.

Girls Weekend to Providence

Every year I look forward to girls weekend. It is never long enough but it is always a blast and just good to get together with the girls. Every year we pick a town in the New England area to explore and this year we chose Providence Rhode Island.

We met up in the old neighborhood where we grew up, with one house separating our parents houses. I dropped off Seamus and walked over, where we of course had to take a Selfie before taking off.

We hit the road and made it into Providence within the hour. Talking and catching up with each other along the way. We headed first to Federal Hill downtown for some lunch and cocktails. This part of town is very Italian dominated and we made friends with the old timers that were sitting on the corner. The restaurant we decided on was Costantino’s and the drinks were amazing! We started with an Eggplant Parmesan appetizer and then shared the Margarita Pizza and the Quattro Formaggi (Gorganzola, Mozzarella and Ricotta) pizza.

We then headed to the Providence Place Mall to do some shopping. I tried to be good so I only got a pair of shoes and some candles from Bath and Body Works. We stopped for some frozen yogurt and before we knew it, it was 5 pm and we hadn’t checked into the hotel yet. So we headed there and rested for a bit. We then headed back to walk around the waterfront and the marketplace where we saw a live statue.

My friend Lynn found the most perfect bracelet that I just had to pick up.

We walked through the wall of hope which was created as a memorial for September 11th and created by residents of Rhode Island.

We found a great spot to stop at while waiting for the fires to be lit.

After a few hours we headed to a late dinner at Bar Louie that had a little bit of a wait. There was an older couple that was trying to push their way into the patio where others were waiting and when my friend told her there was a line she muttered “B$tch” under her breath. I may have said “You are a little too old to be using that kind of language” to which she then stormed out. No one messes with my girls!

We finally got seated but our waitress was a little overwhelmed and we started to chat with the other couple who was waiting for a table. We ended up talking so much they pulled their table over. They were celebrating their 51st anniversary. They were so amazingly funny, and charming. I didn’t take any pictures of our food since we were so engrossed in conversation, but it was really good. We ended up just getting a bunch of appetizers to share. We did share a chocolate cake though.

It was really late so we headed back to the hotel to sleep.

Sunday meant it was time to head home so after packing up we did our tradition of going to a diner for breakfast. Leaving Providence we went over this bridge for the last time.

The Modern Diner in Pawtucket was really busy but the food was delicious.

After breakfast we headed back home, I picked up Seamus and home I went. It was just after noon when I got home so I went grocery shopping, mowed my lawn and cleaned up some of my lawn. I then sat outside with Seamus for a few hours while I read my book.

The rest of the night was relaxing and making up a new recipe I will share tomorrow.

On The Road Again

I may have just returned home from my road trip to North Carolina (my trip recap can be found here and here) but that doesn’t mean I am going to sit at home this weekend. Due to my poor planning awesomeness I am going on the annual girls weekend with my bestest friends! In my defense I thought I was going to spend Monday and Tuesday at home doing projects around my house so it would have been a great weekend to get away. Either way I am excited to go. Every year in place of Christmas and birthday gifts us girls go away for a night and just spend time together. We try and pick a location in New England that is close enough so we don’t spend the whole time driving but far enough that we get to explore a new city. This year we picked Providence for WaterFire. So check back in on Monday for all the trip details. Since it is Friday I am going to share my favorite things.

 

Favorite Song: You know my love of rock so this one should be no surprise. Love this band and i can’t find this song on iTunes! Wahhh!! So I will settle for adding it here. UPDATE: You can get it on Amazon! Heck yeah, adding it to my running playlist!

Favorite Recipe: After last weekend and this weekend delicious but less than healthy food, this coming week is going to be filled with veggies and lean proteins so I can get back on track. Asparagus is my second third favorite green veggie. Right behind Romaine lettuce, and broccoli. These asparagus fries with Lemon Herb Aioli will be on the menu.

Favorite Moment: Getting to spend time with not one but two blogger buds. Maddie of course who hosted me in North Carolina but also Steph from Life According to Steph. She was on her way from Pennsylvania to a wedding in Mass and since my work is right off the highway she stopped by for a quick meet. Next time we need to do dinner! The thing I love about both girls is they are real, relate-able and down to earth, basically the kind of people I would choose for friends if they lived next door.

 Poor Maddie and Tony were subjected to a lot of That’s What She Said coming from my mouth this past weekend, but seriously don’t leave the door open for it. 😉

  Every day at work I have to wear a cardigan thanks to the AC being on full blast.

North Carolina | Road Trip Part II

Did you miss Part I? If so catch up here, don’t worry I’ll wait. Ok? Good. Where did I leave off. Right Sunday…

 WARNING: This post is going to photo heavy and long so I don’t drag it out another day. Don’t say I didn’t warn you, we did a lot!!

Well, let me just say that I slept until 8am, this never happens! Seamus is my early morning wake up call regardless of the day so this felt so decadent. Once Maddie was awake she came down to my bed and we chatted for a bit then decided to head to Dunkin Donuts for some breakfast. When we got back to her house I helped her setup a new domain and redirect her blog to the new domain. She is a blogspot no more!! We then got ready for the day and headed out for some lunch in Durham. We went to Parker and Otis which has a really fun gift shop as well as outside seating.

All Maddie had to say was grilled cheese and I was sold. Thank you to Tony for allowing his coffee to photobomb for the photo op. Such a good sport!

After eating we walked around Durham and Tony told me all the history of some of the places we saw. So many cool places that were built from old tobacco plants.

Then we drove through all the different campuses of Duke University. I felt like a bit of a traitor to Ohio State but it was fun to see the campus.

There was also a very beautiful park, the Sarah P. Duke gardens. Such a beautiful place to walk around or to even picnic.

If was time to catch the Durham Bulls play so we headed through an old train depot that is now a park and water feature. It was so pretty and Burt’s Bees is headquartered there too.

After/during the game we went up to a rooftop bar to grab some drinks and dinner.

The World Cup game was playing and we cheered and boo’d while it was on, while still being able to watch the baseball game. Sadly neither team pulled off a win. Maddie and I took so many pictures that our phones died mid game so we don’t have very many pictures after that point. We headed back to the house and just relaxed in our jammies and laughed the night away.

Monday:

Maddie had to work since it was a spontaneous trip, which was fine since it allowed me to explore the town and to just relax for the day. First we stopped at Chick-Fil-A for breakfast. Since it was my first time there, they didn’t charge for my breakfast. How’s that for customer service.

I made the most of it by heading to Ross (they don’t have these around me) and to World Market (I have ordered online but have not been in a store) for some goods.

I got some new wall art, some makeup organizers, a car seat protector, and leave in conditioner from Ross. I got a bunch of odds and ends at World Market, mostly items that will be food props.

 

I then wanted to get some exercise after all the amazing food so I headed to a park, the E. Carroll Joyner Park. I had a hard time figuring out the map since it was animal shapes but I just kept jogging until I hit just under 3 miles.

Then I headed to the pool in her complex to get some sun. Even with SPF I had tan lines. It was so bright I didn’t realize my finger was in the picture, oops. I stayed out about an hour and a half while reading from my kindle. I jumped into the pool to swim a few laps too.

When Maddie was done with work we headed to the Caroline Ale house for some drinks and food. The food was really good but I think the combination of foods didn’t sit well with me, or maybe it was the sun in combination but I got really sick after we went back to her place.

We hung out on the couch and talked some more, laughed a lot and planned my trip home. It was so bittersweet. The plan was for me to leave at 3am after catching about 5-6 hours of sleep. So I went to bed early.  She got up to help me pack the car and hug me goodbye. It was a 12 trip home but I also had to drop off the rental and pick up Seamus from my Dad’s since he was babysitting him so it was more like a 15 hour drive. I was exhausted but it was still the best trip ever.

I can’t express enough how amazing Maddie and Tony were as host, they were so generous and made me feel so comfortable in their home. Tony is a wealth of knowledge and shared so many cool facts about the places we saw. Maddie is so warm, kind and down to earth. We talked politics and didn’t hate each other after, we differ on some but share the idea of respecting each others opinions. We talked a lot about blogging and bounced ideas, and thoughts against each other. I really feel like we are friends and not just blogging friends though either is a title we would both be happy with either way.

Like I said before I am not spontaneous often, but I am so glad I decided to go. North Carolina is such an amazing place. The amount of times I heard Y’all and Ma’am was endearing. Southern hospitality is a way of life and it is the way to my heart. Raleigh, Maddie, Tony this is not goodbye but I’ll see you later.

North Carolina | Road Trip Part I

Hey, remember me?! I was off gallivanting in North Carolina for the past few days. I left at 10pm on Friday night on just a half hour nap. I might have been a little too excited to hit the road to see Maddie. You can read her re-cap too because it was so sweet it made me blush. She has come up to visit her in-laws and we have gotten to meet about 3 other times so it was nice to see her on her turf. I had to pull over for a 30 minute nap and ended up getting to her place around 10 am.  To say I was tired was an understated but I only took a little over an hour nap before I woke up and was ready to get going.

We did a little bit of shopping and then to Twisted Fork for lunch, we shared some Fried Green Tomatoes. I also got to learn the difference between Vinegar BBQ sauce and the Western BBQ sauce which is tomato based. Who knew?! We also had this amazing dessert which was Cookie Dough, with a Kahlua filling. So good! Then we did a little more shopping and headed towards downtown Raleigh, they had some amazing street performers playing drums, and flutes. It was A-MAZING!! I had a tear at one of the performances.

We then headed to the museum to see an outdoor movie. They played Saving Mr. Banks. It was not what I was expecting but it was a really good movie.

It started to pour on the way to their house and so we had to pull over for it to pass so of course we headed in to Cook Out for a shake. I had the Peanut Butter Fudge and it was so good!!

By this time I was exhausted and it was nearing midnight but that didn’t stop us from staying up a little later to laugh the night away. I am going to say the rest for tomorrow because I just got done with 15 hours of driving and doing laundry, this girl is tired. Sheesh, duh. 😉 I promise not to drag it out I just need more sleep and some Seamus snuggles.
