Confession – When Good Dogs Do Bad

Seamus doesn’t do well with strangers. I have worked on him as much as possible in the 7 years that I have had him but he is still a little fearful. He is so much better from when I first adopted him. On Monday Seamus was attacked. A Black Lab came charging out from their yard barking and latched on to Seamus. A young girl followed and was just standing there not grabbing her dog, I yelled at her “What is wrong with you, grab your dog” (not my proudest moment).

I pulled the two dogs apart, and she finally snapped to it grabbing her dog and I grabbed Seamus. He was yelping, shaking and covered in saliva. He also urinated all over himself. The girl got her Mom while putting her dog away. I checked Seamus for bites or blood but couldn’t see anything through all his fur. I was just around the corner from home and took Seamus home and watched him, every time I tried to check him he yelped so I tried to give him space, and he rested.

In the morning he whined when my alarm went off when normally he barks all excited to go for a walk. I decided to give him a bath so I could flatten down his fur and check him further and I found two areas that were red and one was leaking fluid.

I decided he needed to be checked out so I took him to the vet. One was a puncture from the tooth of the Lab and one was more a scrape. He is on pain meds, antibiotics and warm compresses. So long as it doesn’t get infected he will be fine. I can’t tell you the number of times I cried that day.

I went back to the owner’s house on Tuesday afternoon to get proof of the dogs rabies shots. She was very nice and the dog was updated on everything. She started to cry and we hugged. I told her I completely understand and it happens and to just make sure her dog is always on a leash. Nothing will happen to her dog unless he bites other dogs. I tried to assure her it was all going to be ok. I felt bad because I know how much our animals mean to us and although her dog should have been leashed it was an accident.

I am sharing this if only to say how very important it is to always have your dog on a leash when not in a fenced in yard. You never know what will set your dog off. She did say that her dog reacted to a Husky before but never a little dog.  There is a leash law in Massachusetts and it really should be followed even if just for a short walk. This is not the first time dogs (Labs, Golden Retrievers, and Chihuahuas) have charged after Seamus when not on a leash but the first time one has actually bitten him.

I leave you with this one that I posted on Instagram just to show even after being bitten Seamus is still happy as a clam willing to indulge me in showing off a smile. Just think he was the one no-one wanted and he got bit by a Black Lab. Never judge a book by its cover, Seamus is a good egg.

Iced Orange, Dill and Thyme Breakfast Rolls

 I originally came up with recipe when a contest was going on at The Chalkboard Mag for an original citrus recipe. I didn’t want to do the traditional Sangria or a cake. I wanted it to unexpected but still have an amazing tasting recipe. I was testing these the night the girls came over and we tasted them with butter and jam, maple syrup, and icing and the icing won hands down. Though the maple syrup was a very close second.  Since I am not a full on foodie blog I didn’t think I stood a chance but it was fun to challenge myself. I didn’t make the top 5 so it is okay for me to share the recipe now. Thank you to Stacia for tagging me on the Instagram notice for the contest otherwise I wouldn’t have even known about it.

Ingredients:
3-1/4 cup of all purpose flour
2 TSP instant yeast
1-1/2 TSP Salt
1 TSP Thyme
1 TSP Dill
Zest of 1 Orange
1/2 of Orange – Finely diced
1 Cup Almond milk
2 TBSP Unsalted Butter
1/2 cup Water

Icing:
1 cup powdered sugar
1/4 cup water

Directions:
In a large bowl, or the bowl of a standing mixer, combine the flour, orange zest and orange pieces, yeast, dill, thyme and salt. (Since you are using instant yeast you don’t have to “proof” the yeast i.e. add water)

In a glass measuring cup, warm the milk (approximately 90 seconds) so that it’s hot enough to melt the butter, but not boiling. Add the butter, stirring until melted, then stir in the water.

Pour the milk mixture into the flour mixture, mixing with a dough hook until it just comes together to form a dough for approximately 10 minutes, until the dough is smooth and elastic (if you’re making this recipe by hand, the dough will be very sticky at first; flour your hands and work surface generously and be patient). If the dough is still very wet and sticky after 5 minutes of kneading, add more flour, 1 tablespoon at a time, until the dough is barely tacky. If the dough is too dry, add water, 1 teaspoon at a time, to soften it up.

Spray a glass bowl with pam, add the dough and cover. Allow to rise until doubled, about 1/2 to 1 hour. (NOTE: I set my bowl on a heasting pad to help it rise faster.)

Once doubled, place the dough on a clean, dry work surface. If the dough is too sticky, lightly flour the surface before continuing. With your fingers or rolling pin, flatten the dough into a 9 by 12-inch rectangle.

Tightly roll the dough (like a jelly roll), tucking the ends as needed, into a loaf. Using a serrated knife cut into 1 inch thick slices.

Place in a 9 inch round greased pan, cover with a clean dry towel, and allow to rise until doubled, about 1/2 to 1 hour. (Again place your pan on the heating pad on low)

Pre-heat oven to 350 degrees (180 C). When the loaf is doubled again, place the bread in the oven and bake for 40 to 50 minutes, until the bread is deep golden brown and the internal temperature is about 190 degrees.

Transfer the rolls to a wire cooling rack, mix the powdered sugar and water together until smooth for the icing and add to the top of the rolls. Serve.

Happy St. Patrick’s Day

Happy St. Patrick’s Day!!This weekend was too short but I still got a lot of things done. I spent a little bit much on shopping but I really needed new Spring clothes. So here is how I spent my weekend.

Saturday: I spent some time cleaning up around the house before heading out on a shopping extravaganza!!! I headed out to The Vitamin Shoppe for my Protein powder and quest bars. Then I headed to Kohl’s and Target to get some birthday presents. Then I headed out for a hike.

I was in the 50’s so it was gorgeous out however snow was still on the ground. A few areas were icy but a lot was melted so it just added resistance.  I forgot to wear my polar but I did have my fitbit on, here is the before steps and after.

After hiking I headed over to Old Navy because they were having a sale for trying on pants. Sad thing is I didn’t like any of their pants. I think my store is just really small so selection was not great. I still did some serious damage.

Yes, that is 3 tank tops, 4 tops, 1 lightweight sweatshirt, 1 dress, 1 pair of flats, and hair ties but NO PANTS!!! I did have a $15 dollar off coupon and used my tax refund to support this spree.

When I got home the mail was delivered and I got my Ipsy package. I love the NYC eyeshadow, though not sure about the glitter one. The blue eyeliner I will totally use, and the primer I will give a shot though I don’t normally use a primer.  I tend to be a gloss person over lipstick so more than likely I won’t use the lipstick. Overall not bad, 3 out of 4 I will use.

I took Seamus for a walk and bumped into an old friend from the gym and we made plans to hang out. It was so good to run into her and catch up for a bit. The rest of the night was spent reading and cleaning. 

Sunday: I woke up at 6am so I read for a little bit before breakfast and cleaned a bit more. I then fell asleep from 8:30-9:30am. I then had to get ready for a birthday party for one of my nieces. After getting ready I rushed off to go grocery shopping then left for the party. It was at a gym and they got to run around and jump in a foam pit and climb the rock wall. She turned 5 this week, such a cutie.

birthdayI headed home after and had dinner and read for a bit then ended up falling asleep again for another hour. I am really hoping I am not getting sick. Way to much happening in the next few weeks to be down for the count so loading up on vitamins. The night was capped off with the Walking Dead and blogging.

Mug-tastic Friday

Happy Friday!!! I am excited for this weekend it is supposed to be in the 50’s on Saturday so I am planning on strapping on my hiking books and hitting the trails. There is only a little bit of snow on the ground so I think it should be fine to go out. Then on Sunday is one of my nieces birthday parties so it should be a full weekend. So let’s get on with my five things I am loving this week.

One. I was paired with Meg from Borrowed Heaven for the Mug Swap . It was so fun getting to know her and learning more about her and she is a New England girl too! She got me the cutest mug, some tea, and cupcake liners. I already put the mug and tea to good use and now I need to make some cupcakes soon.

Three. I did this workout on Wednesday and it kicked my booty. I tried to keep the rest between sets really low. Go check out Workoutroutine on Instagram for more workout inspiration.

Four. The blog world seems to be obsessed lately with talking about how life is messy and not just showing the perfect side of life. Not  judging. I have no opinion on this really it’s your blog, post what you want to post. Everyone knows life is imperfect so even if you only show the good, that’s never the whole story. I figured I would just leave you with something to think about.

Five. Currently reading The Weight of Blood by Laura McHugh and loving it so far. It is a little on the darker side and a little back country mystery but I love the dynamics of the characters. I wish I could just stay home and read it in one sitting.

Cookies for Cops and Librarians

In your day to day life you may or may not come in contact with the police. However in the background they are always serving and protecting. So I figured they deserved a little treat for all that they do.

Being respectful of the age old doughnut jokes I decided to do homemade cookies instead. I used the Cocolattas recipe from the Joanne Fluke books and her Lake Eden Cookbook that I got for Christmas. Side Note: I have baked about 20 of the cookie recipes from multiples books and all have been fabulous!!

I headed out to the Police Station of my own free will and they even let me leave! Suckers! Just kidding I am a very good girl!

I am also a huge book nerd and read about 30-50 books from the library every year. Can’t beat free but since I am there every week getting books for free I figured I would also show the librarians some love too since my second Mom (Hi, Mom T) was a library aide, my elementary school and my junior high librarians all sparked my love for books. So I put a dozen cookies down on the book return table. I was checking out and they turned and saw the cookies and totally caught me since I was the only one around they asked me and I couldn’t lie.  They were so surprised and grateful it made me really bashful about it.  Ninja skills -3, Kerry 0.

Creamy Chicken Ranch {Guest Post}

One of my best friends also know as Lynnie (Lynn to those who aren’t cool enough to know her yet) offered to post a recipe that she recently tried to lighten my load a bit since I have been running around a little too much lately. So who am I to turn down free help!! So be kind and show her some love in the comments.

As working mom of a toddler I am all about crock-pot recipes. I was a little concerned about how this would turnout since I was mixing the ingredients into the crockpot while simultaneously making tacos and accidentally dumped a portion of the taco seasoning in the chicken dish when I thought it was ranch dip mix. Oops! Despite that mess up this recipe was a huge success with my little one, my husband and my father-in-law. I will definitely make it again.

Creamy Chicken Ranch

 Ingredients: cooking spray ~ 1/4 teaspoon paprika ~ 2 pounds of chicken breasts (or thighs) – approximately 6 chicken breasts ~ 1 packet of mix ~ 1/2 cup low-sodium (or organic) chicken broth ~ salt & pepper for sprinkling ~ 1/2 teaspoon oregano ~ 1/3 cup half & half (could use fat free) ~ 2 teaspoons cornstarch ~ 3 ounces reduced-fat cream cheese

Directions:

1.     Spray slow cooker with cooking spray (this will save you some serious scrubbing later).

2.     Place chicken in the bottom of the slow cooker and sprinkle evenly with salt, pepper, and paprika.

3.     Add in the packet of ranch dip mix over chicken, and top with the chicken broth.

Be sure it is ranch not taco seasoning like what I did!

4.     Turn on slow cooker and cook on high for 4 hours or low for 6-7 hours.

5.     Thirty minutes before serving, mix 1/3 cup half & half with 1 teaspoon of cornstarch. Add to slow cooker and mix.  Sprinkle on 1/2 teaspoon oregano and 1 teaspoon parsley.

6.     Cube 3 ounces of cream cheese and distribute evenly in the liquid in the slow cooker. Replace lid and cook for an additional 20-25 minutes.

7.     Remove chicken to platter, stir sauce and pour over pasta. For a low-carb meal, serve with a fresh green salad, or steamed vegetables. 

I boiled fettuccine, drained and then put pasta and chicken mixture in one pot and stirred it all together. Then, of course, sprinkled with Parmesan.

 It was delicious like that but I thought it would be great with a vegetable. So for leftover food night I sautéed some mushrooms and then added it to the dish that I heated in the microwave. It was great before but the mushrooms made it even better! I’ve never been a guest blogger and now realize more pictures would have been good. Oh well, I hope you like the recipe as much as I did.

For me I would serve over spaghetti squash and add some broccoli since I am a huge broccoli fan and I don’t eat pasta but I love that it is so easy to add your own flair to it, like she would with the mushrooms. Who doesn’t love a crockpot meal?!

What is rest?

So the plan for this weekend was to rest. What does that look like to me? It was supposed to include reading all weekend. In between reading I was hoping to take Seamus for walks, workout and watch some tv. Well let’s just say that I did most of that but I jam packed a bunch of other stuff into to, because let’s be real this is me we are talking about here.

So what did I get myself into this weekend?

Friday: The clock was ticking to finish two books in two days so I spent the majority of the night reading. The first one was Death, Taxes and Green Tea Ice Cream by Diane Kelly.

Saturday: I finished the first book and moved on to the second book.  The Art of Falling by Kathryn Craft which was a really good book.

I baked a few cakes to practice for a birthday party. Took Seamus for a walk. He was enjoying the melting snow.

Then a few of my favorite movies came one so I was done reading for the night.

Legally Blonde is on now and the Family Stone is on next!! Guess I know what I am doing tonight besides making cake!

Sunday: It started off with making some bacon for breakfast, then turned into baking banana bread since I had some bananas that were about to go bad. Then making cookies for a Random Act of Kindness. I took a short break to go grocery shopping and take Seamus for a walk. I went to the library and the police station to drop off the cookies. Then I frosted the rest of the practice cake. It ended up being 7pm before I actually sat down.

The rest of the night was for blogging and watching the Waking Dead. Oh and then I got this little gem that reminds me why I am single. Seriously guys? Manners go a long way! This is not the first time I have gotten texts like this either but it was the most weird lately.

Friday is Fabulous!

Happy Friday! I am so excited for this weekend. I have two whole days with no plans!! In the next 8 weeks I will only have one other weekend without at least one event if not two so I am going to enjoy not getting out of my PJ’s unless absolutely necessary. Seamus is going to get a few extra walks, I am going to read, clean, bake and watch a lot of Netflix. It will be glorious!!

One. So I may have put too many books on hold at once at the library and have been trying to catch up, but I got the dreaded email saying I have 2 books due in 2 days and 1 book ready to pickup. I just finished a book last night so I am starting one of the two that are due. Totally possible, right? Ugh! #booknerdproblems

Two. My junior and senior year of high school I wore a dress everyday even in Winter to school except for one day when a friend asked me to wear jeans. I love dresses because really it is much easier than trying to decide which top to wear with what pants. It is also very fun and flirty when you want it to be. I just ordered this dress from Venus for only $29.00 so excited to wear it for Spring, when it finally arrives.

Children In Need – Be The Change

 I can’t help but grab the slip of paper that they hand out in front of the grocery store for the food pantry. This past weekend was no exception. Based on the items on the list it looks to be for kids lunches (minus the feminine products).  So who was I to say no?!

Whoever had the idea of standing out front of the supermarket looking for donations was a genius. Guilt trip city. Haha! Genius. If you don’t have the same luck with the food pantry folks stalking your supermarket, find a local food pantry near you by clicking here.
