Birthday Wish List

It is my birthday month and I planned to post this like 2 weeks ago but this took a really long time to put together. Normally if I want something I just go out and buy it, if it’s in my budget of course. Waiting is just really not my thing. That makes it harder for people to buy me gifts.

I also don’t really like to draw attention to me getting older but I do have family that may not know what to get me for my birthday so I am trying to make it easy on them. I am such a giver! 😉 So if you have been struggling on what to get me look no further, these are currently items on my wish list.

Disclaimer: If you haven’t noticed I don’t go for the high end things as I would be sure to break it, lose it, or ruin it. Plus I am a girl on a budget. Haha!

Amazon gift card – So I can get all the eBooks I want. Okay at least a few! 😉 Anyone surprised? Didn’t think so.

Typographical Print – I can see this 8×10 in a white matte and black frame. The spot is picked out already. I have never read Harry Potter I just like the quote. *Cue blog world gasps*

The Textural Stripe Scarf from The Gap in Chambray Blue i.e Mint, really needs to be added to my scarf collection. Sensing a Mint theme. This white plaid one comes as a close second. 

Mophie – Thanks to Rachael for mentioning this on her blog because now I want it. My battery is always running low so this battery charging case is perfect. It charges the backup and the phone at the same time, running low press a button and the backup battery takes over. Winning! In white so I can add a decal to the back to spice it up.

 Rachael Ray 2.5 or 4.5-Quart Stoneware Oval Baker – Wal-Mart | Target to bake all the things. Really this is an investment in my blog recipes. Bwahaha.

Anchor bookends – I am obsessed with anchors lately. I plan on spray painting them in a hammered black finish but the design of the anchor is perfect!

 

My actual birthday isn’t until August 30th but if you follow Astrology you know I am a Virgo to the core, though I am on the Leo cusp too so some personality traits I find apply too.

Chorizo Nachos

My obsession with Chorizo is in full force lately. There really isn’t anything I can’t add Chorizo too. This weekend I was craving Nachos so when I saw this recipe for Bacon Nachos in the Taste of Home magazine I knew I was going to make my own version.

 

Chorizo Nachos
Ingredients: Tortilla Chips ~ 1/2 package of Chorizo ~ 1/2 medium tomato, diced ~ 1/3 cup refried beans ~ 1/4 cup Greek Yogurt or Sour Cream ~ 1 TBSP Olive Oil ~ 8 oz Cheddar Cheese, shredded (Optional)

 

Chorizo Nachos
Directions: Remove the casing from the Chorizo and break into bits. Place in a saute pan with the Olive Oil until lightly browned.

Heat the refried beans in the microwave approximately 2-3 minutes.

Place a handful of tortilla chips to a plate. I used the Green Giant Veggie Tortilla Chips but any tortilla chips will do.

Sprinkle the diced tomatoes on top of the chips. Dallop the refried around the chips. Place the chorizo on top and then add the Greek Yogurt on top.

 

I could tell you that I was trying to be healthy so I left off the Cheddar Cheese, however after grocery shopping I was hangry and I forgot to add it. I wanted to get my eating on so I totally forgot it. If you want the cheese you can add it on top of the Chorizo and melt in the microwave for 1-2 minutes or until the cheese is melted and then add the Greek yogurt. I can say that I didn’t think it needed the cheese but I will be trying it with cheese too.

Weekend In Maine

I figured I would tell you about my trip to Maine, since this weekend was mostly spent trying to get caught up with the usual stuff like an oil change, trip to Walmart, the bank, reading, cleaning etc.  It really is more interesting.

I will try and spare you with too much detail and just share all the pictures. I will say that most of our time was spent either sitting in the side yard, shopping or walking on the beach. It was very relaxing. I also got up no later than 6am sometimes earlier so I took a lot of sunrise pictures.

 

Some details:

Stayed in Tenants Harbor/ Martinsville it is about 30 minutes from Camden, Rockland and Rockport

Drove up on Saturday morning and left Wednesday morning

The cabin didn’t have a shower so we had to wash our hair outside and sponge bath everyday

There was a total of 7 adults and 3 kids on this trip split between two cottages

I took a ton of pictures but I didn’t want to display the obscene number of similar pictures I took. I mean the sunsets and sunrises were unreal. I love Maine because I could totally see myself living that life. Beach life, surrounded by trees and just being in nature is so important to me.

I like waking to the sound of the birds, the sound of the waves and the crispness of the air. It was perfect. It is always nice to spend time with family too. We got to just spend time together which is hard to do when we are all spread out.

Friday Favorites – I’m Back!

Well I am finally back from Maine. I was actually back Wednesday night but thanks to a WordPress update I was swamped with over 4k+ spam comments that I had to delete and clear. I am still trying to catch up but hopefully after the weekend I will be. I had such a great time and just being near the water and family was so peaceful. I woke up before everyone else, of course so I got to read a lot before everyone woke up.

 

So while I am getting myself together enjoy some of my favorites for the week and I will be sure to share some more pictures from the trip on Monday.

 

Favorite Video: Julia Roberts was on Jimmy Fallon and they played a game called Face Balls. They taped it in slow motion and watching it back. It was hilarious. She was such a good sport.

 


 

Favorite Vacation picture: It is too hard to pick just one so I am giving you two. The sunrises were amazing, the colors in the sky were breathtaking.

This picture from one of our beach walks is a close second. The smoothness of the sand, the rock being slightly covered and the seaweed that ended up nearby was just a little bit of beach heaven. I love the ocean, hearing the waves and walking on the sand, this had it all.

Favorite DIY Project: I don’t have a ton of counter space in my kitchen or storage but I love to bake which means lots of supplies. This nook could really clean up a lot of space. How adorable right? I already have all my supplies in mason jars and labeled so it would be easy to re-create this look.

Favorite Book: I read this one on vacation thanks to an advanced readers copy from NetGalley, and it was a really quick read. Hunky 6’4″ bouncer who steps up to help a waitress Evie when she has a panic attack. What is not to love? Yes, it is a romance the hot guy chases the shy quiet girl but it was more than that, I found myself laughing out loud many times. The dialogue between Mateo and Evie is fun and light even when it’s not. He is ex-military turned ex-con after protecting his sister from an attacker.  Evie is working her way through nursing school while trying to move past her father’s embezzlement scandal, and suicide. They help each other through healing while still having the push and pull that draws you in. Now the struggle to wait for the other two books in the series to come out.

Friday Favorite | Books, Queso and Maine

Friday is it really you?! It feels like it took so long to get here, maybe it’s because I am heading to Maine tomorrow so it has dragged. Getting to hang with my girls is going to be so much fun. I am going to be on radio silence until we get back so be sure and follow me on Instagram to see some of our Maine adventures.

 

Favorite Website and Deal: I have mentioned BookBub in passing a few times, but since I have used it a lot recently I figured it was time to share it. It sends you an email everyday with free or deeply discounted books. Signup is free, it is a great way to feed your reader and discover new books and authors. I downloaded this one to take with me on vacation, along with like 5 others. Hmm might not get to them all but I will have fun trying.

Favorite Returning Show: Season 2 of Below Deck begins Tuesday August 12th at 9/8c but they played a preview last weekend that is getting me excited. Nothing better than people stuck on a boat, either liking or hating each other and lots of drunken debauchery. What is not to like about this show? Set your DVR. It is on Bravo, and while you are waiting binge watch Season One.

 

Favorite Recipe: I hit the mother load when I found this Chorizo Pinterest board. So many different Chorizo recipes, I am in heaven. This Queso with Chorizo in on my list to make really soon.

 

 

Favorite Song: This is a relatively new band for me but I really like this song by Egypt Central.

 

Favorite Funnies:

Chorizo Salad and Homemade Honey Mustard

I posted a salad on my favorites post on Friday and it was the inspiration for this salad. The original recipe can be found here, but as with everything I do I modified it a lot. I don’t really like avocado that much and I wasn’t in the mood for poaching or making a hard boiled egg. Since I changed that I wanted to do a Honey Mustard dressing in place of the Chili lime dressing so this salad came together.

I tend to go hard core with feta cheese so the Mozzarella was a really nice change for me and I really liked it. I ended up going back for seconds because Chorizo, duh! It makes my Portuguese side happy! This can easily be doubled or tripled based on the number of people you are serving. I had leftovers.

 

Chorizo Salad and Homemade Honey Mustard
 

Ingredients: Head of Romaine lettuce ~ 1/2 package Chorizo, sliced on an angle ~ 2-3 Roma Tomatoes, sliced ~ 1 TBSP Olive Oil ~ 1-2 ounces Fresh Mozzarella ~ 1/2 Cucumber ~ OPTIONAL: Texas Toast or Ciabata bread

Salad Dressing: 1/2 cup Greek Dressing ~ 1/4 cup Honey ~ 2 TBSP Honey Dijon Mustard ~ pinch of pepper

 

Chorizo Salad and Homemade Honey Mustard
Directions: Mix up the dressing ingredients and place in the fridge up to 24 hours in advance but no less than 30 minutes before serving. 

 Place the olive oil in a saute pan and place tomatoes in, cooking approximately 2-4 minutes per side or until browned. Remove from pan and set aside. Add the Chorizo to the pan and cook until brown.

Chop up the top of the head (or is it called stalk?) of the romaine and add to your serving bowl. Place the crisper bottom portion of the lettuce on top. Toss in the tomato, sliced cucumber, and Chorizo.  Using your hands rip and tear the mozzarella tossing on top. No need to be dainty here.

Optional: Place some Texas toast, or Sourdough bread under the broiler for 1-2 minutes per side or until lightly golden. Keep an eye on it you don’t want it to burn. Cut into slices. You can even butter and add some garlic salt if you like.

Serve, eat, then go for seconds. Or not, whatever. Don’t judge! 🙂

Weekend of Lazy

I know I have said before that I had lazy weekends but this one took the cake. I didn’t get any runs in, and I mostly just laid on the couch and read. I took a bunch of naps and cleaned my house. It was the first time in awhile where I finally got all my cleaning done before the weekend was over. Score!!

 

I did get a few things done though…..

 

Saturday: I took Seamus to the vet and he lost 6 ounces. Woohoo. He still needs to lose like 2 pounds be he is well on his way.

After dropping Seamus off at home I headed out to Wal-Mart for some odds and ends, and then to Ikea for new curtains. I still need to hem them so no pictures just yet.

 

I love to go different ways home every so often, to get “lost” and find new places. This time was no different. I happened on this cute little park that had a water fall and walking path so I pulled over to sit for a bit.

I also drove by a sheep farm and a horseback riding camp. I took down the names so I could look into going later.

Sunday: I had hoped to go to the beach but it decided to rain instead. So I read for most of the day. I did a little online shopping, like this dress that was just under $28.

 I also got this really cute bag from Groopdealz , it was $12.99 but the deal ends tomorrow so I snagged it quick.

 

I did make a delicious dinner that I will be sharing the recipe for tomorrow. It had Romaine lettuce, roasted tomato, Chorizo, cucumber and fresh mozzarella with a homemade Honey Mustard dressing. I went back for seconds. 😉

Friday Favorites | Salad Heaven

Happy Friday! I can’t say I have really anything planned for this weekend other than Seamus getting his yearly physical. Hopefully chunky monkey has lost some weight from the long winter.

Other than that it should be a mild weekend. I will be getting started on my Summer Reading List, hitting the beach, and cleaning my house. I might make a trip to Ikea for some new curtains but it is a bit of a hike so not sure about that one. I will be getting some good runs in too, I am going into week 4 of the 10k training. It’s getting serious.  Well let’s get to it shall we, it’s Friday so of course I am sharing some of my favorites.

 

 

Favorite Song: Back when I was training for triathlons Papa Roach filled my playlist for my 2 hour training sessions. They are so hard energy and the beats kept me pushing hard. Still a big favorite of mine now that I am running so much. 

 

 

Favorite Show I’m Looking Forward To Watching: I got an email reminder from Netflix regarding The Killing come back on August 1st. I can’t thank Netflix enough for keeping this show going. So looking forward to binge watching this one.  A female detective who doesn’t give up, and a male detective who pushes her buttons, yup my kinda show.

Favorite Blog Post: We all know that I love to be positive and upbeat but I am human and some days kick me in the pants. It is all in how you recover, how long it takes you turn it around, and not staying in the negative that matters. Love Steph’s perspective on this post.

 

Favorite Recipe: This salad just looks heavenly. Salad with chorizo, chilli roasted tomatoes, avocado and poached eggs with a chilli lime dressing. It had me at Chorizo. 🙂 

 

Favorite Funnies: My running has been going well, so far no pain but I don’t think I’ll ever be a “runner”. Linking to the pin since it is linked to the main page.

Summertime and the Reading is Easy

With the heat of the summer, I like to spend as much time outdoors as I can even if it is just pulling up a chair and reading in my yard.  I always bring a book with me to the beach so it is no surprise that when Heather mentioned a summer reads linkup I was in. I love finding new books to read so getting to peruse other people’s bookshelf is my kinda linkup!

Fuzzy Navel Protein Shake

To be honest this recipe came out of nowhere. I knew I wanted to make a recipe using peaches. They just looked so good at the store so I had to pick them up. I was originally going to make a peach tart, or a peach pie but I after the overcast reading weekend I just wasn’t feeling like baking anything.

Then when I was on the treadmill I was dreaming of what I was going to have post-workout, because duh that is really why we workout. For the post-workout food. I figured a protein shake would be the fastest way to get some nutrition, and it would not require me to turn on the oven. Win – win!

 

This was so light and refreshing, and I used sugar free versions of the orange juice and lemonade to save on the sugar content. Great way to get some protein in, while disguising it with a bit of fruity goodness.

Ingredients: 1/2 cup 0% Greek Yogurt ~ 1 Cup of Orange Juice ~ 1 Cup of Lemonade ~ 1 medium/large Peach

Directions: Place all ingredients into a blender and blend, blend, blend. Pour and enjoy! So simple you have no excuse not to make this one.
